SWEETIE PIE'S MACARONI AND CHEESE RECIPE - (4.2/5)

Sweetie Pie's Macaroni And Cheese Recipe - (4.2/5) image

Provided by Gams

Number Of Ingredients 14

1 pound elbow macaroni
1 cup whole milk
2 cans (12 ounce each) evaporated milk
3 eggs
1 cup butter, cut into small pieces
1/2 pound Colby Jack cheese, shredded
1/2 pound Monterey Jack cheese, shredded (if you can't find Colby Jack)
1/2 pound sharp Cheddar cheese, shredded
1 pound Velveeta cheese, cut into small chunks
Salt, to taste
1 tablespoon white pepper
1 tablespoon sugar
1 cup shredded American or mild Cheddar cheese
1 heaping tablespoon sour cream

Steps:

  • Heat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Cook pasta according to package directions. Drain and transfer the pasta to a 9x13-inch casserole dish. Set aside. In a large bowl, combine the whole milk, evaporated milk and eggs. Mix with a fork until thoroughly combined. Add the butter and Colby, Monterey Jack, sharp cheddar and Velveeta cheeses to the pasta. Pour the milk and egg mixture over the pasta. Season with salt, pepper and sugar and toss. Sprinkle the top of the pasta with the remaining cup of American or cheddar cheese. Bake for 30 to 45 minutes, or until the top is lightly golden brown.

Tips:

  • Choosing the right cheese is essential. A good combination of sharp cheddar, Gruyère, and Parmesan provides a rich and flavorful sauce.
  • Use high-quality pasta. Sweetie Pie's uses cavatappi pasta, which holds the sauce well and cooks evenly.
  • Don't overcook the pasta. Al dente pasta is best for mac and cheese, as it will continue to cook in the sauce.
  • Make a roux to thicken the sauce. A roux is a mixture of butter and flour that is cooked together until it forms a paste. This helps to thicken the sauce and prevent it from becoming watery.
  • Season the sauce to taste. Add salt, pepper, and other seasonings to taste. You can also add a touch of cayenne pepper for a little heat.
  • Top the mac and cheese with a breadcrumb topping. This adds a crispy texture and helps to brown the top of the dish.
  • Bake the mac and cheese until it is bubbly and golden brown. This usually takes about 20 minutes.
  • Let the mac and cheese cool slightly before serving. This helps to prevent the cheese from becoming stringy.

Conclusion:

Sweetie Pie's mac and cheese is a delicious and comforting dish that is perfect for any occasion. With its rich and flavorful sauce, crispy breadcrumb topping, and perfectly cooked pasta, it's no wonder that this dish is a favorite among Sweetie Pie's customers. Whether you're making it for a family dinner, a potluck, or just a cozy night in, Sweetie Pie's mac and cheese is sure to be a hit.
