TASTY BAKED MAC N CHEESE
I love this recipe because it's taken me so long to actually get a good tasting noodle and not just a good tasting piece of cheese on top. This recipe was just trial and error and it's really really good in my opinion. I'm really looking for feedback on this recipe. Thanks so much! This is really good even days after for leftovers. The cheese remelts and the flavor really sets in. Enjoy!

Yield 18 balls

Steps:
- Crush cheese puffs into a fine powder and set aside.
- In a saucepan over medium heat, add the butter. Once the butter is melted, add milk, cheddar, mozzarella, and cream cheese. Whisk until all the cheese has melted and sauce is smooth.
- Pour cheese sauce over cooked pasta, stirring to ensure thorough coverage of the noodles.
- Cover and refrigerate the cheese-coated pasta for at least 2 hours, allowing for it to cool completely and for the cheese sauce to bind the pasta together. This recipe also works well with leftover mac 'n' cheese.
- Using your hands, take the chilled mac 'n' cheese and form it into 1-inch (2 ½ cm) balls.
- Dredge the balls in flour, followed by egg before finally coating them in the powdered cheese puffs.
- Heat the oil to 350˚F (180˚C) and fry the mac 'n' cheese balls until the outside is crispy, about 2 minutes. Once done frying, transfer to a wire rack to drain. Lightly sprinkle with salt before serving.
- Enjoy!

FRIED MAC AND CHEESE BALLS
Steps:
- Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
- In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
- Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
- Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
- Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.
Tips:
- Use high-quality macaroni and cheese: This will make a big difference in the overall flavor of your mac n' cheeseballs.
- Make sure the macaroni and cheese is cooked al dente: This will help to prevent the mac n' cheeseballs from becoming soggy.
- Use a variety of cheeses: This will give your mac n' cheeseballs a more complex flavor.
- Don't be afraid to experiment with different fillings: You can add cooked bacon, diced ham, or even vegetables to your mac n' cheeseballs.
- Be careful not to overcook the mac n' cheeseballs: They should be cooked until they are golden brown and crispy on the outside, but still gooey and melted on the inside.
- Serve the mac n' cheeseballs with your favorite dipping sauce: Ranch dressing, marinara sauce, or even barbecue sauce are all great options.
Conclusion:
Mac n' cheeseballs are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they are sure to be a hit with everyone who tries them. So next time you are looking for a fun and tasty treat, give mac n' cheeseballs a try!
