Yield serves 8

Number Of Ingredients 15

Unsalted butter, for the baking dish
1 pound elbow macaroni
6 large eggs, at room temperature
8 tablespoons (1 stick) unsalted butter, melted
1/2 cup (4 ounces) cubed Velveeta cheese
3 cups half-and-half, at room temperature
2 1/2 cups (10 ounces) grated sharp yellow cheddar cheese
1 cup (4 ounces) grated extra-sharp white cheddar cheese
3/4 cup (3 ounces) shredded mozzarella cheese
1/2 cup (2 ounces) grated Asiago cheese
1/2 cup (2 ounces) grated Gruyère cheese
1/2 cup (2 ounces) grated Monterey Jack cheese
1/2 cup (2 ounces) grated Muenster cheese
Pinch of kosher salt, or to taste
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Preheat the oven to 325°F. Lightly butter a 4-quart rectangular baking dish.
  • Bring a large saucepan of salted water to a boil. Add the macaroni and cook until slightly al dente, about 7 minutes. Drain and set aside to keep warm.
  • Whisk the eggs in a large bowl until frothy. Add the butter, Velveeta, and 1 cup of the half-and-half. Add the warm macaroni and toss until the Velveeta has melted and the mixture is smooth. Add the remaining 2 cups half-and-half, 1 1/2 cups of the yellow cheddar, the remaining cheeses, the salt, and the pepper. Toss until completely combined.
  • Pour the mixture into the prepared dish, and bake for 30 minutes. Sprinkle with the remaining 1 cup yellow cheddar and bake until golden brown on top, about 30 minutes. Serve hot.

Tips:

  • Choose the Right Cheese: Use a blend of cheeses for a more complex flavor. Some good options include cheddar, Gruyère, Parmesan, mozzarella, fontina, and brie.
  • Shred the Cheese Fresh: Pre-shredded cheese contains cellulose, which can make the cheese grainy and less flavorful. Shredding the cheese yourself just before using it will give you the best results.
  • Cook the Pasta Al Dente: The pasta should be cooked al dente, or slightly firm to the bite. This will prevent it from becoming mushy when it's baked.
  • Make a Roux: A roux is a mixture of butter and flour that is used to thicken the sauce. This will help to prevent the sauce from becoming too thin and watery.
  • Use Fresh Herbs and Spices: Fresh herbs and spices will add a lot of flavor to the mac and cheese. Some good options include parsley, thyme, rosemary, garlic, and onion.
  • Don't Overcook the Mac and Cheese: The mac and cheese should be baked until it's bubbly and golden brown, but not overcooked. Overcooked mac and cheese will be dry and crumbly.
  • Serve with a Side Salad: A side salad is a great way to balance out the richness of the mac and cheese. Some good options include a green salad, a Caesar salad, or a fruit salad.

Conclusion:

Magnificent Seven Cheeses Mac is a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can make the best mac and cheese possible. So next time you're looking for a comforting and satisfying meal, give this recipe a try. You won't be disappointed!
