Other options are beef strips, tofu, or a veggie stir fry. If a spicier sauce is desired, add up to 2 teaspoons more chili sauce, or just toss in a teaspoon of ground cayenne pepper. Yum-O!

Make Your Own Takeout Cashew Chicken or Pork with Orange Sauce and Scallion Rice image

Provided by Rachael Ray : Food Network

Time 55m

Yield 4 servings

Number Of Ingredients 12

2 cups chicken stock
2 tablespoons canola, vegetable or other high-temperature cooking oil
1 cup white rice
1 small bunch scallions, thinly sliced on an angle
6 chicken cutlets or chicken thighs or 6 thin pork loin chops
1 large bundle broccolini or 1 head broccoli
Salt
1 1/2 inches fresh gingerroot, peeled and finely chopped or grated
2 to 3 garlic cloves, finely chopped
3 tablespoons tamari (aged soy sauce)
1/3 cup orange marmalade
1/2 cup roasted unsalted cashews

Steps:

  • In a sauce pot, heat 1 1/2 cups of the stock and 1 tablespoon of the vegetable oil. Bring to a boil and stir in the rice. Lower the heat and bring to a bubble, cover, and simmer until the rice is tender, about 18 minutes. Fluff with a fork and add the scallions.
  • Meanwhile, thinly slice the chicken or pork.
  • Trim the broccolini or broccoli and cut into 2-inch pieces or florets. Bring 2 inches of water to a boil in a shallow pot or deep skillet over medium heat. Salt the water and cook the broccolini or florets until tender-crisp, about 3 to 4 minutes. Drain.
  • Heat a large skillet over high heat while the broccolini cooks. Add 1/2 tablespoon of the oil and when it begins to smoke or ripple, add the chicken and brown it for 5 to 6 minutes, turning once, then transfer it to a plate. Add the remaining 1/2 tablespoon of oil to the pan, stir in the ginger and garlic and cook for 1 minute. Add the tamari, the marmalade, and the remaining 1/2 cup of chicken stock. Slide the chicken, broccolini, and cashews into the pan and stir to combine with the sauce. Simmer for another 1 to 2 minutes.
  • Scoop the chicken mixture into serving dishes, top with a scoop of rice, and serve.

Tips and Conclusion

Here are some expert tips for making the perfect orange sauce for stir-fry:

  • Choosing the Right Oranges: Opt for ripe and juicy oranges with a vibrant orange hue. Avoid oranges that are bruised or have blemishes.
  • Zest Before Juicing: Before juicing the oranges, grate the zest using a microplane or fine grater. The zest adds a burst of citrusy flavor and aroma to the sauce.
  • Straining the Juice: Strain the orange juice through a fine-mesh sieve to remove any pulp or seeds, ensuring a smooth and silky sauce.
  • Balancing the Sweetness: Taste the orange juice and adjust the amount of sugar or honey accordingly. For a tangy sauce, you may need less sweetener.
  • Adding Spices: Experiment with different spices to enhance the flavor of the sauce. Ground ginger, garlic powder, or a pinch of red pepper flakes can add warmth and complexity.
  • Thickening the Sauce: If you prefer a thicker sauce, cornstarch or arrowroot powder can be used as thickeners. Mix a small amount of cornstarch or arrowroot powder with water to form a slurry, then stir it into the simmering sauce until it reaches your desired consistency.

In conclusion, making your own orange sauce for stir-fry is a delightful and versatile culinary adventure. With the right ingredients and techniques, you can create a flavorful and vibrant sauce that complements various stir-fry dishes. Whether you're a seasoned cook or a beginner in the kitchen, this homemade orange sauce will elevate your stir-fry experience and impress your family and friends.
