2 (1 ounce) envelopes spring vegetable soup mix (like Knorr)
1 teaspoon baking soda
2 tablespoons butter, softened
1 large egg
2 cups buttermilk
1/2 teaspoon salt

Steps:

  • Combine 4 1/2 cups flour, soup mix, and soda in a large mixing bowl; add butter and egg, beating at medium speed with an electric mixer until blended.
  • Add buttermilk, beating well.
  • Stir in enough remaining 1 cup flour to form a soft dough. Turn dough out onto a lightly floured surface, and knead 4 or 5 times.
  • Divide dough into fourths; roll each portion into a 10 x 12-inch rectangle (about 1/16 inch thick). Cut into 2-inch squares, using a pastry wheel or pizza cutter, and place on lightly greased baking sheets. Prick with a fork and sprinkle with salt.
  • Bake at 400° for 12 to 15 minutes or until golden. Transfer to wire racks to cool completely.

They're quick to mix together and very easy to roll out. "Healthy" crackers can be hard and dry, but this week's offerings are not. I use olive oil in all of them, and some work best with a small amount of butter. I've been making sesame crackers for decades, tweaking my recipe over the years. They have a wholesome, rich, nutty flavor.

1 1/4 cups whole-wheat flour
1/2 cup toasted sesame seeds
1/2 teaspoon salt
5 tablespoons extra virgin olive oil or sesame oil
4 to 5 tablespoons water, as needed

Steps:

  • Preheat the oven to 350 degrees with the racks positioned in the middle and upper third. Line two baking sheets with parchment paper.
  • Mix together the flour, sesame seeds and salt in a mixing bowl, in the bowl of a stand mixer, or in a food processor fitted with a steel blade. If using a mixing bowl, add the oil and cut in with a fork. If using a stand mixer, mix at medium speed. In a food processor, pulse until the mixture is crumbly. Add the water, and mix with your hands, or at medium speed in a mixer or in the food processor, until you can gather the dough into a ball.
  • Lightly dust your work surface and roll out the dough, or roll out between pieces of parchment, plastic or wax paper. Cut into desired shapes -- squares, diamonds or cookie-cutter shapes -- and place on the baking sheet, close together but not touching.
  • Bake 15 to 20 minutes until lightly browned, switching the sheet trays front to back and top to middle halfway through. Remove from the heat, and allow to cool on racks.

This is in response to a request for an alternative to Graham Crackers for those who live in countries where these are unavailable. I've tried shortcutting these to make a baked graham cracker crust, but found sometimes shorter isn't always better. These remind me of Nabisco's Honey Grahams. If you wish to make them into the Cinnamon Grahams, just sprinkle a little cinnamon and sugar over the top before baking.

Number Of Ingredients 13

1 cup white flour
1 1/4 cups whole wheat flour
5 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
3 tablespoons butter or 3 tablespoons margarine, cold and sliced into small pieces
1/4 cup vegetable shortening (I use Crisco.)
2 tablespoons honey
1 tablespoon molasses
1/4 cup water
1 teaspoon vanilla extract

Steps:

  • Combine flours, sugar, salt, baking soda, baking powder, and cinnamon in a large bowl.
  • Work in the butter and shortening with your fingers until the mixture has the consistency of coarse crumbs.
  • In a separate bowl, mix the honey, molasses, water and vanilla.
  • Sprinkle this mixture over the dry ingredients and toss with a fork until well blended.
  • Form the dough into a ball.
  • Cover and chill for several hours.
  • Cut the dough in half and let it sit for 15 minutes at room temperature.
  • Sprinkle a piece of wax paper with whole wheat flour.
  • Roll out one of the dough pieces flat to about 7 x 15 inches.
  • If the dough cracks or breaks, just pinch the edges back together.
  • Poke a fork into the dough at 1/2-1" intervals.
  • Then cut into 2 1/2" squares.
  • Use a spatula to move the squares to a large, ungreased baking sheet.
  • You can place them close together.
  • Repeat with the other half of the dough.
  • Bake in the center of the oven for 15 minutes at 350 deg F or until lightly browned on the edges.
  • Store at room temperature in an airtight container.
  • Will keep up to a month (Remember there are no preservatives).
