A wonderfully rich, yet healthy creamed soup. From Taste of Home Healthy Cooking Dec 2008. You won't believe the richness from a lighter soup. I should mention that being from Maryland, I add Old Bay Seasoning and it takes it right over the top!

Steps:

  • Heat a good splash of olive oil in a large soup pan, add the chopped bacon and garlic and fry on a moderate heat for around three minutes, stirring regularly until cooked.
  • Once the bacon is cooked, add the peppers, tomatoes, onion and lemon peel and cook for around 10 minutes, stirring occasionally until everything is very soft.
  • Remove the lemon peel and add the white wine and bring to a boil, turn it down to a simmer and leave to reduce by half.
  • Once the wine is reduced by half, add in the fish stock and potatoes, bring back to the boil, then reduce to a simmer and leave for around 1 hour until the potatoes are nice and soft.
  • Put mayonnaise into a bowl or jug, ladle in some of the liquid a little at a time, stirring until you have a thin consistency. Once the mayonnaise mixture is thin and water like, pour it into the pot and stir.
  • Add the fish chunks and simmer for 2-3 minutes, then add the mussels and prawns and simmer for a further 2-3 minutes, stir and remove from the heat.
  • Garnish with chopped parsley, a squeeze of lemon juice and crusty bread. (season to taste)

Tips:

  • Use a variety of seafood. This will give your soup a more complex flavor. For this recipe, we're using shrimp, scallops, and mussels, but you can also use crab, lobster, or any other type of seafood you like.
  • Don't overcook the seafood. Seafood cooks very quickly, so it's important to not overcook it. Otherwise, it will become tough and rubbery. Cook the seafood until it is just opaque and cooked through.
  • Use a good quality broth. The broth is the base of your soup, so it's important to use a good quality one. We recommend using a homemade chicken or fish broth, but you can also use a store-bought broth if you're short on time.
  • Season the soup to taste. Add salt, pepper, and other seasonings to taste. You can also add a splash of lemon juice or white wine for a little extra flavor.
  • Serve the soup hot. Creamy seafood soup is best served hot, so make sure to reheat it before serving if you're making it ahead of time.

Conclusion:

Creamy seafood soup is a delicious and easy-to-make dish that's perfect for a special occasion or a weeknight meal. By following these tips, you can make a creamy seafood soup that is sure to impress your friends and family.
