Time 58m

Yield 2 serving(s)

Number Of Ingredients 7

2 medium swordfish steaks
1 lime, divided
3 tablespoons olive oil, divided
2 tablespoons flour
2 tablespoons cornmeal
1 tablespoon italian seasoning or 1 tablespoon cajun seasoning (optional)
1 tablespoon butter

Steps:

  • Marinade fish in juice of 1/2 lime and 2 Tbs olive oil for 1/2 to 3/4 hours Mix flour, corn meal and old bay seasoning.

  • Heat 1 Tbs of butter and 1 Tbs olive oil in fry pan (cast iron being best).
  • Fry swordfish approx 4 minutes per side or until done.
  • Squeeze addition lime juice on swordfish if desired.

Tips:

  • Use fresh, high-quality ingredients: This is especially important for the fish, as it will be the star of the dish. Look for firm, opaque fish with no fishy smell.
  • Score the fish before cooking: This will help the marinade penetrate the fish and cook it more evenly.

  • Use a flavorful marinade: The marinade for this recipe is a combination of lime juice, coconut milk, ginger, garlic, and spices. It adds a delicious flavor to the fish.
  • Serve the fish with a refreshing salsa: The salsa for this recipe is made with tomatoes, cucumbers, onions, and cilantro. It is a great way to add some freshness and brightness to the dish.
