3 large chicken breasts
1/4 cup butter (melted)
2 Tablespoons Dijon mustard
3/4 cups Italian bread crumbs
1/4 cup grated Parmesan cheese
6 pieces of sliced ham
6 pieces of Swiss cheese
2 Tablespoons Dijon mustard
3 Tablespoons Mayonnaise
1 teaspoon mustard
1 teaspoon honey

Steps:

  • Preheat your oven to 400 degrees. Line a cookie sheet with tin foil. Place an oven safe rack inside your tray on top of the cookie sheet. Set aside.
  • Slice your chicken in half lengthwise giving you two thin chicken pieces.
  • Whisk together the butter and 2 tablespoons of Dijon in a shallow bowl.
  • Whisk together the Italian breadcrumbs and Parmesan in a separate shallow bowl.
  • Dip your chicken into the butter mixture followed by the breadcrumbs. Make sure to coat evenly.
  • Transfer to your prepared cookie sheet. Bake 20 to 30 minutes or until your chicken reaches an internal temperature of 165 degrees. Flip halfway through for even cooking.
  • Top the chicken with a slice of ham followed by a slice of cheese. Bake an additional 3-5 minutes or until the cheese is melted.

6 boneless skinless chicken breasts (pound 'em thin)
6 slices cooked ham
6 slices swiss cheese
1 egg
1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup fine dry breadcrumb
2 tablespoons vegetable oil
2 tablespoons butter
1 tablespoon water
1 teaspoon mustard
1/4 cup mayonnaise

Steps:

  • Stir egg and 1 tablespoons water together with a fork.
  • Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly.
  • Heat oil and butter in large skillet over medium heat.
  • Brown chicken 4 to 5 minutes on each side.

¼ cup all-purpose flour
