1/4 cup sour cream
1/4 teaspoon curry powder
1/8 teaspoon salt
1 cup diced cooked chicken
1 can (8 ounces) pineapple chunks, drained
1/4 cup chopped green pepper
1/4 cup frozen or canned crabmeat, drained, flaked and cartilage removed
1 tablespoon diced pimientos
2 large avocados, peeled and sliced
2 tablespoons lemon juice
Lettuce leaves
Red grapes, optional

Steps:

  • In a large bowl, combine sour cream, curry powder and salt. Add the chicken, pineapple, green pepper, crab and pimientos. Cover and refrigerate for 1-2 hours. Just before serving, toss avocados with lemon juice. Place avocados and crab mixture on lettuce. Garnish with grapes if desired.

1 honeydew melon - peeled, seeded, and cubed
4 large fresh peaches - peeled, pitted, and sliced
3 oranges, peeled and sliced
3 cups sliced fresh strawberries
2 large mangoes - peeled, seeded, and chopped
4 kiwis, peeled and sliced
1 pint blueberries
1 pint fresh raspberries
1 cup heavy whipping cream
½ cup confectioners' sugar
½ cup coconut-flavored rum (such as Malibu®)
1 cup miniature marshmallows
½ cup shredded coconut

Steps:

  • Combine cantaloupe, honeydew melon, peaches, oranges, strawberries, mangoes, kiwis, blueberries, and raspberries in a large bowl.

2 ripe avocados, pitted and flesh roughly diced
1 red onion, finely diced
1/2 cup diced English cucumber
8 (16/20 count) cooked shrimp (peeled and deveined and cut lengthwise in half)
1/2 cup jumbo lump crabmeat
Salt and freshly ground black pepper
1/2 cup plain yogurt
1/4 cup tomato ketchup
1 lemon, juiced
1 teaspoon hot sauce (recommend: Tabasco)
2 tomatoes, thinly sliced
1/4 cup freshly chopped chives

Steps:

  • In a large bowl mix together the diced avocado, onions, cucumber, shrimp, and crabmeat and season with salt and pepper, to taste. In another bowl or a kitchen blender mix together the yogurt, ketchup, and lemon juice. When mixed thoroughly, slowly add the hot sauce, (not too much as it will over power the seafood).
  • To finish the dish, slowly add the dressing to the avocado mixture until slightly wet. Place 3 to 4 slices of tomato in the center of each serving plate, slightly separate just so the tomatoes touch.
  • Fill an ice cream scoop with the salad and place in the center of the tomatoes. Garnish with chopped chives and serve.
