Yield 12 servings

Number Of Ingredients 19

whole chicken
carrot, celery, onion, bay leaf
salt & pepper
1 T veg oil
2 T butter
1 med onion, diced
3 stalks celery, diced
1 T minced garlic
1/2 tsp tarragon
1/2 tsp oregano
2 tsp Hungarian sweet paprika
2 tsp Kosher salt
1/2 tsp black pepper
1/2 cup plus 2 T Wondra
4 cups reserved broth
4 cups chicken broth
1 can diced tomatoes w/juice
3/4 cup cream
2 cups thinly sliced spinach

Steps:

  • Cook chicken and aromatics in crockpot until tender; 6-8 hours on low. Cube 3 cups meat. Reserve 4 cups broth. Heat oil and butter and saute onions and celery til onions are translucent, 6-7 minutes. Add garlic, tarragon, oregano, paprika, salt and pepper. Cook, stirring, 3-4 min. Add Wondra and stir until well-combined. Slowly whisk in broth and bring to a boil. Add tomatoes and cream. Reduce heat and simmer 20 minutes. Add reserved chicken and simmer 10 min. Just before serving, stir in spinach.

Tips:

  • Use high-quality ingredients: Fresh, organic vegetables and free-range chicken will make a big difference in the flavor of your soup.
  • Don't overcrowd the pot: If you add too much chicken or vegetables, they won't cook evenly and the soup will be bland.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop.
  • Season the soup to taste: Add salt, pepper, and other herbs and spices to your liking.
  • Serve the soup with a variety of toppings: such as grated Parmesan cheese, croutons, or a dollop of sour cream.

Conclusion:

Mama Leone's Chicken Soup is a delicious and hearty soup that is perfect for a cold winter day. It is also a great way to use up leftover chicken.
