1 cup butter, softened
2 cups sugar
4 large eggs, separated
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2-1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt, divided
1 cup whole milk
1 cup sweetened shredded coconut
1-1/2 teaspoons grated orange zest
ICING:
2 cups sugar
3 large egg whites
5 tablespoons melted snow (or water)
2 teaspoons light corn syrup
1 teaspoon vanilla extract
Sweetened shredded coconut

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Add egg yolks and extracts; beat well. Combine flour, baking powder and 1/2 teaspoon salt. Add to creamed mixture alternately with milk. 1 can (12 ounces) evaporated milk

¾ cup vegetable oil
