AUTHENTIC NEW ORLEANS BBQ SHRIMP

Authentic New Orleans BBQ Shrimp image

BBQ Shrimp was born at Pascal's Manale restauruant on Napoleon Ave in New Orleans. There are as many versions of this famously delicious as there are revelers during Mardi Gras. Not to be confused with traditional BBQ, true New Orleans BBQ Shrimp is a simple combination of spices, lemon, Lea & Perrins Worcestershire sauce, and...

Time 15m

Number Of Ingredients 11

16-20 jumbo shrimp (about 1 1/2 pounds)
2 Tbsp fresh lemon juice (2 lemons)
1 tsp minced garlic
2 tsp coarsely ground black pepper
1 tsp freshly cracked black pepper
2 tsp creole seasonings (tony cacherie's)
1/3 c worcestershire sauce
4 bay leaves
3 stick unsalted butter, cubed
french bread (reislings or leidenheimer's)
lots of napkins or a wet hand towel

Steps:

  • 1. In a large heavy skillet, preferably cast iron, combine shrimp, lemon juice, garlic, lemon juice, black peppers, Creole seasoning, worcestershire sauce, and bay leaves; cook over medium high heat until shrimp turn pink, about 1-2 minutes on each side.
  • 2. Reduce heat to medium and start adding butter, a few cubes at a time, stirring or shaking pan vigorously constantly.
  • 3. When butter melts then add a few more cubes - continue until all butter is incorporated. Don't add the butter all at once, it won't emulsify into the sauce.
  • 4. Remove skillet from heat. Place 4-5 shrimp into a bowl (for appetizer), 8-10 (for entree), and pour sauce over the shrimp. Serve with lots of French Bread and a wet hand towel.

Every once in a while I can't find my cookbook so I search the web for this favorite. Most have errors. Some list butter which when used made the dish taste like glue. You need the oil in the maragine! Taken from Jeff's book

Time 30m

Yield 6 serving(s)

Number Of Ingredients 12

3 bacon, slices fried until clear chopped (I don't drain and the receipe is silient)
1/2 lb margarine (I replace one stick with a 1/2 cup of water added with the shrimp and it comes out fine)
2 tablespoons Dijon mustard
1 1/2 teaspoons chili powder (pure found in Indian markets but the ususal blend is fine)
1/4 teaspoon basil
1/4 teaspoon thyme
1 teaspoon ground black pepper
1/2 teaspoon oregano
2 garlic cloves, crushed
2 tablespoons rex crab boil (I use "Old bay" crab boil found in front of the fish counter)
1/2 teaspoon Tabasco sauce (I add 1 tsp)
1 1/2 lbs shrimp, with shell (I use sized 31-40 per pound sized and peel them)

Steps:

  • In small fry pan, cook 3 slices of bacon until clear, chop (I don't drain and the receipe is silient).
  • Add all other ingrediences except Shrimp to fry pan and simmer for 5 minutes.
  • Preheat oven to 375.
  • Place shrimp in an open baking dish and pour over the sauce, stir to coat.
  • Bake uncovered for 20 minutes stirring twice (the small shrimp take only 15 minutes).
  • While baking the shrimp I make some white rice. and serve it over a mound of rice! easy company dish.

Tips:

  • For the marinade, use a mixture of soy sauce, brown sugar, garlic, ginger, chili powder, and paprika to give the shrimp a flavorful and slightly spicy coating.
  • Don't overcrowd the shrimp on the skewers. Leave some space between each shrimp to ensure even cooking.
  • Preheat your grill or barbecue to medium-high heat before cooking the shrimp. This will help create a nice char on the outside of the shrimp.
  • Cook the shrimp for 2-3 minutes per side, or until they are cooked through and slightly charred.
  • Serve the shrimp immediately with your favorite dipping sauce, such as a spicy mayo or a sweet chili sauce.

Conclusion:

Manales' Bar-B-Que Shrimp is a delicious and easy-to-make appetizer or main course. The marinade infuses the shrimp with flavor, while the grilling process creates a slightly charred exterior. Serve the shrimp with your favorite dipping sauce, and enjoy!
