No Fuss Mandarin Orange Cake w/ Vanilla Coconut Frosting image

There are a number of recipes out there for this cake but, frankly, I don't care for the pineapple-vanilla pudding frosting. Coconut is much more my style! Plus, the cake is moist enough without the pudding on top.

Tips:

  • Use fresh mandarin oranges for the best flavor. If you can't find fresh oranges, you can use canned mandarin oranges, but be sure to drain them well before using.
  • Grate the coconut finely so that it blends well into the batter. If you don't have a grater, you can use a food processor to chop the coconut.
  • Don't overmix the batter. Overmixing will make the bars tough.
  • Bake the bars until they are golden brown on top. A toothpick inserted into the center of the bars should come out clean.
  • Let the bars cool completely before frosting them. This will help the frosting set properly.

Conclusion:

Mandarin orange coconut bars are a delicious and easy-to-make treat that are perfect for any occasion. They are moist and flavorful, with a sweet and tangy frosting. These bars are sure to be a hit with everyone who tries them.
