3 tablespoons champagne vinegar
Coarse salt
1/2 cup extra-virgin olive oil

Yield Makes about 1 cup

Number Of Ingredients 9

1 garlic clove
1/2 teaspoon salt
1/3 cup fresh orange juice
3 tablespoons fresh lime juice
1 tablespoon minced shallot (1 small)
2 teaspoons honey
1 teaspoon cumin seeds, toasted
1/2 cup vegetable oil
1/4 teaspoon black pepper

Steps:

  • Mince garlic and mash to a paste with 1/4 teaspoon salt, then whisk together with orange and lime juices, shallot, honey, cumin, and remaining 1/4 teaspoon salt.
  • Add oil in a slow stream, whisking until well blended, and whisk in pepper.

Tips:

  • For a tangy vinaigrette, use freshly squeezed orange juice and rice vinegar. If you don't have rice vinegar, you can substitute white wine vinegar or apple cider vinegar.
  • Add a touch of sweetness to the dressing with honey or maple syrup. You can also use agave nectar or stevia if you prefer.
  • To make a creamy vinaigrette, whisk in some Greek yogurt or sour cream. This will give the dressing a thicker consistency and a richer flavor.
  • For a nutty flavor, toast some sesame seeds or almonds and add them to the dressing. You can also use chopped walnuts or pecans.
  • For a more savory vinaigrette, add a pinch of salt and pepper. You can also add some minced garlic or shallots.
  • Store the vinaigrette in a jar or container with a tight-fitting lid in the refrigerator for up to 2 weeks.
