  • Add Chicken, corn, pineapple (water chestnuts and bamboo shoots if using) and sauce and cook on med high until sauce has thickened and there is no pink in the chicken (about 2 minutes).
  • Add orange sections and pour over pasta, toss and serve hot.

Tips:

  • Prep your ingredients in advance: Cut your chicken, pineapple, and vegetables into bite-sized pieces before you start cooking. This will save you time and ensure that everything cooks evenly.
  • Use a large skillet or wok: This will give you plenty of space to stir-fry your ingredients without overcrowding them.
  • Cook the chicken in batches: If you try to cook all of the chicken at once, it will steam instead of fry. Cook it in batches of 2-3 pieces at a time, until all of the chicken is cooked through.
  • Don't overcook the vegetables: Stir-fry the vegetables just until they are tender-crisp. Overcooking will make them mushy.
  • Add the sauce at the end: This will prevent the sauce from burning.
  • Serve immediately: Stir-fry is best served hot, right out of the wok or skillet.

Mandarin pineapple chicken stir-fry is a quick and easy weeknight meal that is packed with flavor.
