Steps:
- Dice the mangoes, jalapenos, and red onions. Drain and rinse the black beans.
- Combine fresh cilantro, 1 tbs. red onion, juice of 1 lime, and mangoes in a small bowl. Set aside. In another small bowl, whisk together the sour cream, coconut milk, and sugar. Set aside.
- Saute black beans, red onion, and jalapeno in a little bit of olive oil and season with salt and pepper. Saute gently because the beans will "mush" easily if you get too rough with the spatula. When onions and jalapenos have softened, remove mixture from heat.
- Layer the black beans and mangoes on a warmed corn tortilla. Drizzle with cream and enjoy!

BLACK BEAN MANGO SALSA
I love this salsa! It makes for a perfect summer appetizer. I particularly like that it has black beans for extra protein. When served over grilled chicken, it is even better.

Tips:
- Utilize ripe mangoes: The sweetness and flavor of ripe mangoes contribute significantly to the overall taste of the tacos. Choose mangoes that are slightly soft to the touch and have a vibrant yellow color.
- Black bean preparation: Before cooking, rinse the black beans thoroughly to remove any impurities. Consider using a slow cooker or pressure cooker to achieve tender, well-cooked beans.
- Seasoning the black beans: Enhance the flavor of the black beans by adding a blend of spices, such as cumin, chili powder, garlic powder, and salt. Adjust the seasoning according to your personal preference.
- Pico de gallo freshness: For the best results, prepare the pico de gallo just before serving. This ensures that the ingredients retain their freshness and vibrant flavors.
- Crispy tortillas: Warm the tortillas before serving to achieve a crispy texture. You can use a skillet, griddle, or even a toaster oven to heat them.
