Time 1h

Yield 2 cups

Number Of Ingredients 4

900 g mango pulp
115 ml lemon juice
115 ml orange juice
800 g caster sugar

Steps:

  • Preheat oven to 100°C.
  • Place mango pulp and juices into a large pan over low heat and simmer for 10-15 minutes or until most of the liquid has evaporated.
  • Meanwhile spread the sugar on a large baking tray, place in the oven and warm for 5 minutes.
  • Blend or sieve the mango mixture, then return to the pan.
  • Stir in the warmed sugar and cook gently over low heat until the sugar has dissolved.
  • Increase the heat to medium and cook, stirring occasionally to prevent catching, for up to 30 minutes or until mixture is thick.
  • Spoon the mixture into clean, sterilised jars. Cover and seal.
  • Mango mixture will keep in the fridge for up to 3 weeks.

Tips:

  • Prep your mangoes: Ensure your mangoes are ripe and juicy. Peel and cut them into small pieces for easier blending.
  • Choose the right spices: Experiment with different spices to create unique flavor profiles. Chili powder, cumin, turmeric, and ginger are popular choices for a savory spread, while cinnamon, nutmeg, and cloves add a sweet and aromatic touch.
  • Balance flavors: Taste your spread as you go and adjust the balance of sweet, sour, and spicy. A harmonious blend of flavors will result in a delicious spread.
  • Don't overcook: Keep an eye on the spread while cooking to prevent overcooking. Overcooked mango spread can lose its vibrant color and flavor.
  • Let it cool: Allow the spread to cool completely before transferring it to jars. This will help preserve its consistency and prevent spoilage.

Conclusion:

With careful selection of ingredients, skillful preparation, and attention to detail, you can create a delectable mango spread that will tantalize your taste buds and elevate your culinary creations. Whether you prefer a savory or sweet spread, the versatility of mango allows for endless possibilities. Experiment with different spices, herbs, and fruits to discover your favorite flavor combinations. Remember, the key to a remarkable mango spread lies in the balance of flavors and the preservation of the mango's natural goodness. Embrace the culinary journey and savor the vibrant flavors that mango spread has to offer.
