1 1/2 cup wheat bran
1 1/2 cup milk
1 tsp. orange zest
1 cup white-wheat flour
1/4 cup brown sugar
1 tsp. baking soda
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. cardamom
1/2 cup maple syrup
1/3 cup coconut oil (melted) or vegetable oil
1 large egg
1 tsp. vanilla extract

Steps:

  • In a medium sized bowl, pour in the wheat bran with the milk and orange zest. Stir ingredients together. Let the wheat bran soak up the milk for 10-15 minutes while you prepare the other ingredients.
  • Preheat the oven to 375 degrees F and line a muffin tin with muffin liners or spray with non-stick baking spray.In another bowl, combine the flour, brown sugar, baking soda, baking powder, salt, cinnamon and cardamom.
  • Then in the bowl with the bran add in the vanilla, egg, maple syrup and oil. 1/3 cup packed light-brown sugar
1/4 cup pure maple syrup
2 large eggs, room temperature

1 1/2 cups bran cereal
1 cup wheat bran (such as Bob's Red Mill)
Softened salted butter, for serving

1 cup bran flakes
1/3 cup raisins
1/2 cup chopped walnuts
1 cup maple syrup
1 cup sour cream
2 eggs
2 tablespoons maple syrup
2 tablespoons butter, melted

2 cups bran cereal (such as All Bran)
1 cup whole wheat flour
1 3/4 tsp baking powder
1/2 tsp ground cinnamon
1/4 baking soda
1/2 cup refrigerated egg product or 2 eggs lightly beaten
1/3 cup packed brown sugar
1/4 cup maple syrup
3 Tbsp canola oil
3/4 cup raisins
1/3 cup sifted powdered sugar
1/4 tsp maple syrup
fat free milk

Steps:

  • 1. Heat oven to 350 degrees. Lightly coat twelve 2 1/2" muffin cups with nonstick cooking spray. 2. In a large bowl, stir buttermilk into bran cereal; let stand for 5-10 min or until cereal is softened. In a small bowl, stir together flour, baking powder, cinnamon and baking soda; set aside. 3. Stir eggs, brown sugar, syrup and oil into bran mixture. Add flour mixture to bran mixture; stir just until combined. Add raisins. Spoon batter into prepared muffin cups, until each is nearly full. 4. Bake at 350 degrees for 25-30 min or until a toothpick inserted in centers comes out clean.
