Time 30m

Yield 12 pancakes (4 servings)

Number Of Ingredients 19

1 1/2 cups all-purpose flour
1/2 cup blue cornmeal
Pinch salt
1 tablespoon sugar
1 tablespoon baking powder
2 large eggs
1 1/2 to 2 cups milk
2 tablespoons unsalted butter, melted
1 cup fresh blueberries, plus more for garnish
2 to 3 bananas, peeled and sliced
Orange-Honey Butter, recipe follows
Cinnamon Maple Syrup, recipe follows
Confectioners' sugar, for garnish
3 cups fresh squeezed orange juice
2 sticks butter, slightly softened
2 tablespoons honey
Pinch salt
2 cups pure maple syrup
2 to 3 cinnamon sticks

Steps:

  • Preheat a nonstick griddle. Preheat the oven to 200 degrees F.
  • Mix together the dry ingredients in a medium bowl. Beat the eggs and 1 1/2 cups of the milk in a medium bowl until combined, then stir in the melted butter. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the blueberries. If the batter seems too thick, add some of the remaining milk.
  • Ladle approximately 1/4 cup of the batter onto the griddle for each pancake. Cook until the bottom is light golden brown, flip, and continue cooking for about 30 seconds. Remove to an ovenproof plate and keep warm in the oven until ready to serve. Serve 3 pancakes per person with a dollop of orange-honey butter, cinnamon maple syrup, and bananas. Garnish with blueberries dust with confectioners' sugar.
  • Place orange juice in a small non-reactive saucepan over high heat and reduce to 3 tablespoons. Place butter in a bowl and add the orange syrup, honey, and salt; mix until combined. Scoop into a large ramekin, cover with plastic wrap, and refrigerate until firm, about 2 hours.
  • Heat syrup and cinnamon sticks over low heat for 10 minutes. Remove and let steep for 1 hour. Remove sticks and pour into a small pitcher.

1/2 c pure maple syrup
1/2 c honey
1 c powdered sugar
1 tsp cinnamon, optional

Steps:

  • 1. Place all ingredients into a medium bowl and beat on low until incorporated, then on medium high for 1 1/2 - 2 minutes...you want to make sure your get it whipped together very well or the maple syrup with start to break down the butter. IF this happens to you after a couple days or even more, just re beat it.
  • 2. Store in air tight container in refrigerator. I pop in microwave for 10-15 seconds and stir, if I want it soft.
  • 3. It stores well in refrigerator up to a month, well, that's the longest I've ever had it last until it was gone, so it might be good longer, but I don't know. lol

Time 20m

Number Of Ingredients 11

WAFFLES
1 c ap flour
1/4 tsp salt
3 eggs, separated
1 c cream, i used 1/2 cream and 1/2 milk, you could use 1 c half and half as well
MAPLE HONEY BUTTER
1 1/2 c butter, softened
1/2 c real maple syrup
1/2 c honey
1 c powdered sugar
1 tsp cinnamon, if desired

Steps:

  • 1. In a large mixing bowl, combine flour and salt. In a small mixing bowl beat egg yolks on low, add cream slowly while mixing. Beat for 1 minute. (I used half milk, as I didn't have enough cream) Add to flour mixture, mixing on low speed until mostly incorporated then mix on medium high speed until smooth.
  • 2. In another bowl, beat egg whites on high until stiff peaks form. Gently fold into batter.
  • 3. Preheat waffle iron. Drop 1/2 c or so of batter onto waffle iron and proceed according to manufacturer's instructions.
  • 4. Serve warm with Maple Honey Butter and Warm Maple Syrup, if desired.
  • 5. Maple Honey Butter: I almost always have this on hand. It is soooo good on so many things from bagels to squash. It stores well in refrigerator for up to a month, that's the longest I've ever had it last, so it might be good longer, but I don't know. lol Place all ingredients for the butter into a medium bowl and mix on low until incorporated, then on medium high for 2 minutes...you want to make sure your get it all whipped together or the maple syrup with start to break down the butter. (like separated) IF this happens to you after a couple days, just re beat it.

Tips:

  • Use real maple syrup and honey: Artificial maple syrup and honey have a different flavor and consistency than the real thing and will not produce the same results.
  • Use unsalted butter: Salted butter can make the compound butter too salty. If you only have salted butter on hand, be sure to omit the additional salt called for in the recipe.
  • Soften the butter: Softened butter is easier to mix with the other ingredients and will result in a smoother compound butter.
  • Chill the compound butter before using: This will help it to firm up and make it easier to spread.
  • Store the compound butter in the refrigerator: Compound butter can be stored in the refrigerator for up to 2 weeks.
  • Use compound butter on a variety of foods: Compound butter can be used on pancakes, waffles, toast, muffins, roasted vegetables, and more.

Conclusion:

Maple honey butter is a delicious and versatile condiment that can be used on a variety of foods. It is easy to make and can be stored in the refrigerator for up to 2 weeks. With its sweet and savory flavor, maple honey butter is sure to become a favorite in your kitchen.
