Time 45m

Yield Makes 5 dozen

Number Of Ingredients 10

3 cups old-fashioned rolled oats
1 cup all-purpose flour (spooned and leveled)
1 teaspoon fine sea salt
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
1/4 cup pure maple syrup
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, stir together oats, flour, salt, and baking soda. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, 3 minutes. Beat in maple syrup, egg, vanilla, and 1/4 cup water, scraping down bowl as needed. With mixer on low, beat in oat mixture in 2 additions until just combined.
  • Drop dough in rounded teaspoons, 2 inches apart, onto parchment-lined baking sheets. Bake until edges are golden, about 11 minutes, rotating sheets halfway through. Let cookies cool on sheets until set, about 2 minutes, then transfer to wire racks and let cool completely. (Store cookies in an airtight container, up to 1 week.)

Time 1h

Yield About 24 cookies

Number Of Ingredients 10

1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1/2 cup maple syrup
1 large egg, at room temperature
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
3/4 teaspoon fine sea salt
1 1/2 cups finely chopped pecans
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), cream the butter and brown sugar until light and fluffy, 3 to 4 minutes. With the mixer running on low speed, add the maple syrup in a slow, steady stream and mix to combine.
  • Scrape the bowl well, then add the egg and mix on medium speed until the mixture is well combined. Beat in the vanilla.
  • Add the flour, baking powder and fine salt to the mixer and pulse until it starts to combine, then scrape the bowl well and mix on low speed until uniformly combined. Add the pecans and mix until evenly incorporated.
  • Scoop the dough into 2 tablespoon-size rounds on the prepared baking sheets, staggering the rows and leaving at least 1 1/2 inches between each cookie to allow room to spread. Sprinkle flaky sea salt on the surface of each cookie. Transfer to the oven and bake until the cookies are lightly golden around the edges, 15 to 18 minutes. Transfer to a cooling rack to cool before serving.

  • Measure Accurately: Baking is a science, so it's important to measure your ingredients accurately. Use measuring cups and spoons that are specifically designed for baking, and make sure to level off the ingredients after measuring.
  • Use Fresh Ingredients: The fresher your ingredients are, the better your cookies will taste. If possible, use organic ingredients whenever possible.
  • Don't Overmix the Dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the Dough: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the Cookies at the Right Temperature: The temperature of your oven will affect the way the cookies bake. Make sure to preheat your oven to the correct temperature before baking the cookies.
  • Don't Overbake the Cookies: Overbaking the cookies will make them dry and crumbly. Bake the cookies for the amount of time specified in the recipe, or until they are just set.
