Number Of Ingredients 11

1 cup unsalted butter, at room temperature
2/3 cup powdered sugar, sifted
1 1/2 teaspoons almond extract
2 eggs, at room temperature
1/8 teaspoon salt
2 cups all-purpose flour
2/3 cup maraschino cherry, chopped drained
2 egg whites
2 teaspoons lemon juice
1/2 teaspoon vanilla extract

Reduce mixer speed to medium, and gradually beat in flour until the dough is smooth, about 1 minute. Gently stir in the maraschino cherries.

Tips:

  • Use high-quality maraschino cherries for the best flavor. Look for cherries that are plump and have a deep red color.
  • If you don't have any maraschino cherries on hand, you can substitute dried cherries or cranberries.
  • Be sure to drain the cherries well before adding them to the cookie dough. This will prevent the cookies from becoming too wet.
  • For a chewier cookie, chill the dough for at least 30 minutes before baking.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before storing them in an airtight container.

Conclusion:

Maraschino cherry butter cookies are a delicious and festive treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With their sweet and tart flavor, these cookies are sure to be a hit with everyone who tries them.
