1/2 cup firm butter or margarine
1 cup Gold Medal™ all-purpose flour
1/2 cup finely chopped nuts
1 quart (4 cups) mixed-berry frozen yogurt, slightly softened
1 quart (4 cups) vanilla frozen yogurt, slightly softened
2 cups cut-up fruit
1/4 cup chocolate-flavor syrup, if desired

Steps:

  • Heat oven to 350°F. In medium bowl, cut butter into flour, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until evenly mixed. Stir in nuts. Press evenly on bottom of ungreased 9-inch square pan or 9-inch springform pan. Bake about 15 minutes or until light brown. Cool completely, about 30 minutes.
  • Scoop frozen yogurts onto crust, alternating flavors. Spread yogurts slightly to smooth. Cover and freeze at least 3 hours until firm but no longer than 2 weeks.
  • Let stand at room temperature about 10 minutes before cutting. Dip knife into hot water, then run knife along side of dessert to loosen. Top dessert with fruit; drizzle with chocolate syrup. Store covered in freezer.

3 tablespoons chocolate ice-cream topping
1 quart strawberry cheesecake nonfat frozen yogurt, slightly softened
1 quart mixed-berry nonfat frozen yogurt, slightly softened
2 cups cut-up fruit

Steps:

  • Spray bottom and side of springform pan, 9x3 inches, with nonstick cooking spray. Mix chocolate wafer crumbs and ice-cream topping. Press firmly against bottom of springform pan.
  • Scoop frozen yogurts onto crust, alternating colors. Spread yogurts slightly to smooth. Cover and freeze about 3 hours or until firm.
  • Run knife dipped in hot water along side of dessert to loosen; remove dessert from side of pan. Top with fruit.

1 ½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
5 tablespoons hot water
¼ cup cocoa powder
2 large overripe bananas, mashed
½ cup Greek yogurt
½ cup butter, melted
½ cup brown sugar
2 eggs, beaten
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Whisk flour, baking soda, and salt together in a bowl.
  • Whisk hot water and cocoa powder in a large bowl until smooth.
  • Combine mashed bananas, Greek yogurt, butter, brown sugar, eggs, and vanilla extract in another large bowl; mix well. Fold in flour mixture until thoroughly combined.

This recipe has been in our family for many years. It is easy, tasty and quite diet friendly. I hope you enjoy this nice light dessert. The prepatation time includes the refrigeration time.

2 cups graham wafer crumbs
1/3 cup butter (or margarine)
1/4 cup brown sugar
3 cups fruit yogurt (low fat works fine, we like strawberry but use any fruit you like)
3 cups Cool Whip Lite (thawed)

Steps:

  • Melt the butter.
  • Add the next two ingredients and mix to make the crust.
  • Place in a 9" by 13" baking pan and press lightly.
  • Bake in 325F oven for 9 - 10 minutes. Be careful not to scorch it.
  • While the crust cools mix together the yogurt and Cool Whip and then pour it into the cooled crust.
  • Place in fridge for several hours to set.
  • Enjoy!
