Time 25m

Number Of Ingredients 19

1 lb spaghetti or pasta of choice
2 tablespoons olive oil
2 tablespoons butter
1/4 onion, chopped
6 Roma tomatoes, chopped (divided)
4-6 garlic cloves, minced
1/4 cup all-purpose flour
1 1/2 cups low sodium chicken broth
1 1/2 cups milk
2 teaspoons chicken bouillon
1 teaspoon dried parsley
1/2 tsp EACH dried oregano, dried basil, salt
1/4 tsp EACH pepper, red pepper flakes
1/2 cup freshly grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 oz. cream cheese, softetned ((I use 1/3 less fat))
1/4 cup loosely packed basil, chopped
freshly grated Parmesan cheese
fresh basil, chiffonade

Steps:

  • Cook pasta al dente according to package directions in generously salted water. Remove 1 cup pasta water before draining.
  • Melt butter in olive oil over medium-low heat in a large skillet. Increase heat to medium and add onions and HALF of the tomatoes and sauté for 5 minutes. Add garlic and cook an additional 30 seconds. Sprinkle in flour and cook while stirring for 2 minutes (it will be thick).
  • Turn heat to low then slowly whisk in chicken broth, then milk, stirring constantly until smooth. Turn heat to medium high and bring the sauce to a simmer. Stir in chicken bouillon, spices and continue to simmer until slightly thickened, stirring occasionally.
  • Reduce heat to low and stir in Parmesan cheese until melted, followed by mozzarella cheese until melted, followed by cream cheese until melted.
  • Stir in remaining tomatoes and fresh basil. Stir in pasta until well coated, adding additional reserved pasta water a little at a time if needed to reach desired consistency. Taste and season with additional salt, pepper and/or red pepper flakes to taste.
  • Garnish with freshly grated Parmesan Cheese and additional basil if desired.

3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1 tablespoon Lime-salt-sugar, recipe follows

Zest of one lime
2 tablespoons kosher salt
2 tablespoons sugar

Steps:

  • Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
  • Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
  • Blend together lime, salt and sugar in a small blender or mini food chopper.

THE PERFECT MARGARITA

The Perfect Margarita image

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

MARGARITA PASTA

Categories     Pasta

Number Of Ingredients 6

1 package of pasta
2 beefsteak tomatoes
1/2 cup basil
1/4 cup motzerella cheese
1/4 cup parmesean cheese
dash of pepper

Steps:

  • Cook the pasta as the box indicates. As the pasta cooks, coursely dice the tomato, finely chop the basil and grate the cheese. Once the pasta has cooked, mix in the cheese so that it can melt in the heat of the pasta. Once the cheese has melted, add in the basil and tomatoes. Serve warm with a sprig of basil on top and grate some fresh parmesean on top.

Tips:

  • Choose the right pasta: Short pasta shapes like penne, shells, or rotini are ideal for this recipe as they hold the sauce well.
  • Cook the pasta al dente: This means cooking it until it is slightly firm to the bite. Overcooked pasta will become mushy and won't hold its shape.
  • Use fresh, ripe tomatoes: This will give your sauce the best flavor. If fresh tomatoes are not available, you can use canned diced tomatoes.
  • Don't overcrowd the pan: When cooking the chicken and vegetables, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Season to taste: Add salt, pepper, and garlic powder to taste. You can also add other herbs and spices, such as basil, oregano, or thyme.
  • Serve immediately: Margarita pasta is best served immediately, while the sauce is still hot and the pasta is al dente.

Conclusion:

Margarita pasta is an easy and flavorful weeknight meal that is sure to please the whole family. With its creamy, cheesy sauce, tender chicken, and fresh vegetables, this dish is a hit with both kids and adults. So next time you're looking for a quick and easy pasta recipe, give margarita pasta a try. You won't be disappointed!
