2-1/2 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons dried parsley flakes
1 teaspoon salt
2 large eggs, room temperature
3/4 cup 2% milk
2 tablespoons butter, melted
2 teaspoons grated onion
1 can (15-1/4 ounces) whole kernel corn, drained
Oil for deep-fat frying

Steps:

  • In a large bowl, whisk flour, baking powder, parsley and salt. In another bowl, whisk eggs, milk, melted butter and onion until blended. Add to dry ingredients, stirring just until moistened. 1 (14.75 ounce) can creamed corn
¾ cup all-purpose flour, or as needed
½ cup milk
1 egg, beaten
¼ cup white sugar
2 ½ teaspoons salt
2 teaspoons vegetable oil
2 teaspoons baking powder
1 teaspoon vanilla extract
1 dash ground black pepper
¼ cup oil for frying, or as needed

This one has been in our family for as long as I can remember. A long time ago my grandma used to use fresh corn, but as the family got BIG and there were a lot of mouths to feed (more to make too) she went to can corn just to make it faster. I cut the recipe in half.

4 tablespoons milk
3 tablespoons butter, melted
