Steps:
- In a large bowl, combine the ingredients for the marinade: yogurt, garlic, paprika, cumin, onion, lemon zest and juice, olive oil, cilantro, salt, and pepper.
- Add the chicken to the marinade and stir to coat evenly. Cover and refrigerate for at least 2 hours up to overnight.
- Preheat the grill to medium-high heat. Grease the grill grates thoroughly as the yogurt marinade makes the chicken stick to the grates.
- Thread the chicken onto skewers and grill the chicken kabobs until golden brown and cooked through, turning the skewers occasionally, 13 to 15 minutes. If necessary, use a metal BBQ spatula to scrape underneath the kabobs to release prior to turning.
- Serve immediately. You can keep the chicken on the skewers or feel free to take it off.

Steps:
- Mix the marinade ingredients with some seasoning. Add the chunks of chicken, mix well, cover and chill. Leave to marinate for at least 2 hours or overnight.
- Soak 12 bamboo skewers in cold water - this will prevent them burning when cooking (or use metal skewers). Thread the marinated chicken onto the skewers (discard any remaining marinade), alternating with pieces of pepper and onion. Brush the skewers lightly with oil and season.
- Heat the grill to high. Grill the kebabs for 15 minutes, turning every few minutes, until golden and lightly charred. The veg should be tender, and the chicken cooked through, so it easily slides off the skewers.
- Warm the flatbreads in a griddle pan or dry frying pan on a medium heat until golden and toasted. Serve with the kebabs, lettuce, chilli sauce, extra yogurt and squeeze over some lemon just before eating.

Tips:
- Choose the right chicken. Boneless, skinless chicken breasts or thighs are both good choices for kebabs. If using chicken breasts, be sure to pound them to an even thickness so that they cook evenly.
- Use a flavorful marinade. The marinade is what will give your kebabs their flavor, so be sure to choose one that you like. The recipe in the article uses a simple marinade made with olive oil, lemon juice, garlic, and herbs, but you can also use a store-bought marinade or create your own.
- Skewer the chicken properly. When skewering the chicken, be sure to leave a little space between each piece so that the air can circulate and the chicken can cook evenly. You can also alternate the chicken with vegetables, such as bell peppers, onions, or zucchini.
- Cook the kebabs over medium heat. This will help to prevent the chicken from drying out. If you are using a grill, be sure to preheat it to medium heat before adding the kebabs.
- Serve the kebabs with a dipping sauce. The lemon-pepper yogurt sauce in the recipe is a great option, but you can also use your favorite barbecue sauce or tzatziki sauce.
Conclusion:
Marinated chicken kebabs are a delicious and easy-to-make meal that is perfect for summer cookouts. By following the tips above, you can make sure that your kebabs are juicy, flavorful, and cooked to perfection.
