Time 8h20m

Yield 16

Number Of Ingredients 12

½ cup olive oil
½ cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
¾ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

Steps:

  • In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
  • Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
  • To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

Tips:

  • Prep the Olives: Before marinating, remove any pits or stems from the olives. Slitting or slicing the olives allows the marinade to penetrate deeper, enhancing the flavor.
  • Immerse Fully: Ensure the olives are completely submerged in the marinade. Use a container that allows ample space for the olives to soak up the flavors evenly.
  • Marinate for Depth: The longer the olives marinate, the more flavorful they become. Allow at least 24 hours for the flavors to develop, but you can marinate them for up to a week for maximum taste.
  • Enhance the Cheese Ring: Beyond olives, consider adding chopped nuts, herbs, or spices to the cheese ring mixture for extra texture and flavor.
  • Keep it Chilled: Once prepared, store the marinated olive cheese ring in the refrigerator to maintain its shape and freshness. It can last up to 3 days when properly refrigerated.
  • Garnish Elegantly: Before serving, sprinkle some fresh herbs, chopped nuts, or a drizzle of olive oil over the cheese ring for a touch of visual appeal and added flavor.

Conclusion:

Marinated olive cheese rings offer a delightful combination of flavors and textures, making them perfect for any occasion. Experiment with different olive varieties and marinade ingredients to create unique flavor profiles. They serve as an impressive appetizer, complementing a charcuterie board, or enjoyed as a standalone snack. With their ease of preparation and endless customization options, marinated olive cheese rings are sure to become a favorite among your culinary repertoire.
