Number Of Ingredients 12

2 tablespoons unsalted butter, softened, for baking dish
12 ounces brioche or challah, cut into 1-inch cubes
2 cups milk
3 cups heavy cream
4 large eggs, plus 1 large egg yolk
1 cup sugar
1/2 teaspoon salt
1 tablespoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup raisins
1 cup boiling water, plus more for pan

Steps:

  • Butter a 9-by-13-inch baking dish; set aside. Put bread in a large bowl; set aside. Heat milk and cream in a medium saucepan over medium-high heat until just about to simmer; remove from heat.
  • Whisk eggs, yolk, sugar, salt, vanilla, cinnamon, and nutmeg in a medium bowl. Whisking constantly, pour cream mixture in a slow, steady stream into egg mixture. Pour over bread; fold to combine. Let stand 30 minutes, tossing and pressing occasionally to submerge bread.
  • Meanwhile, soak raisins in 1 cup boiling water for 30 minutes.
  • Drain; stir raisins into bread mixture. Preheat oven to 350 degrees. With a slotted spoon, transfer bread to buttered dish; pour liquid in bowl over top. Using spoon, turn top layer of bread crust side up.
  • Set dish in a roasting pan; transfer to oven. Pour boiling water into pan to reach about halfway up sides of dish. Bake until golden brown, about 50 minutes. Let dish cool on a rack 10 to 20 minutes.

Number Of Ingredients 10

2 tablespoons unsalted butter, melted, plus more, softened, for baking dish
8 slices white bread
1 1/2 cups grated sharp cheddar cheese
1 1/2 cups grated Swiss cheese
2 tablespoons chopped fresh chives
4 large eggs
2 cups milk
1/8 teaspoon cayenne pepper
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Butter an 8-inch square baking dish; line bottom with 4 slices bread. Sprinkle with half of each cheese. Top with chives. Layer with remaining bread and cheese.
  • Whisk together eggs, milk, melted butter, cayenne, salt, and pepper. Pour mixture into baking dish. Cover; refrigerate at least 6 hours (or overnight).
  • Preheat oven to 325 degrees. Bake bread pudding until puffed and golden, about 40 minutes. Let stand 10 minutes before serving.

Tips:

  • Use a variety of bread: Use a mixture of different types of bread to add flavor and texture to your bread pudding. Try using a combination of white bread, wheat bread, and croissants.
  • Soak the bread in a custard mixture: Before baking, soak the bread in a custard mixture made with eggs, milk, and sugar. This will help the bread pudding to be moist and flavorful.
  • Add your favorite mix-ins: Feel free to add your favorite mix-ins to the bread pudding, such as fruits, nuts, chocolate chips, or spices. Just be sure not to add too much, or the bread pudding will become too dense.
  • Bake the bread pudding in a water bath: Baking the bread pudding in a water bath will help to prevent it from drying out. Place the bread pudding dish in a larger pan filled with hot water and bake according to the recipe.
  • Serve the bread pudding warm or cold: Bread pudding can be served warm or cold. If you are serving it warm, top it with a dollop of whipped cream or ice cream. If you are serving it cold, let it chill in the refrigerator for at least 2 hours before serving.
