4 large green tomatoes
1 cup white cornmeal
1 cup panko bread crumbs
2 1/2 teaspoons kosher salt, divided
2 teaspoons freshly cracked black pepper
1/2 teaspoon cayenne pepper
1 cup buttermilk
1 cup yogurt, divided
1 cup sour cream
1/4 cup horseradish
1 teaspoon lemon zest
2 tablespoons lemon juice, freshly squeezed
1 quart corn oil, for frying

Steps:

  • Wash, dry and slice the tomatoes into 3/8-inch thick. Transfer the tomatoes to a paper towel to drain.
  • Combine the cornmeal, panko bread crumbs, 1 teaspoon salt, pepper, and cayenne in a shallow bowl.
  • In a second shallow bowl, combine the buttermilk and half of the yogurt.
  • Meanwhile, combine the sour cream, remaining yogurt, horseradish, lemon zest, lemon juice and 1/2 teaspoon of the salt to make the horseradish cream. Cover and refrigerate until serving.
  • Heat the oil in a cast iron pan to 365 degrees F.
  • Dip the sliced tomatoes in the buttermilk mixture and shake off any excess. Press them into the panko mixture and repeat until all the tomato slices have been coated.
  • Carefully lower the battered slices, in batches, into the hot oil. Cook for 2 to 3 minutes on both sides, then move them to a wire rack to drain. Sprinkle them with remaining salt while they are still hot. Arrange them on a serving platter and serve immediately with the horseradish cream.

4 (1/2 inch) slices green tomato
1 teaspoon salt
¾ cup cornmeal
¾ cup bread crumbs
½ teaspoon salt
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 eggs
2 tablespoons milk
1 cup all-purpose flour
3 tablespoons vegetable oil
1 tablespoon butter
2 tablespoons sweet pickle relish
2 tablespoons mayonnaise
2 teaspoons hot sauce, or to taste

Steps:

  • Place tomato slices onto a rack over a paper towel. Sprinkle with 1 teaspoon salt and let slices stand for 15 minutes for the salt to draw out extra juices.
  • Mix cornmeal and bread crumbs together in a bowl; stir in 1/2 teaspoon salt, black pepper, and cayenne pepper to taste. Beat eggs with milk in a separate bowl. Place flour into a third bowl.
  • Pat tomato slices dry with paper towels. Lay slices, one at a time, into flour; flip to coat both sides and let slices rest in the flour for about 30 seconds.   • Place a large nonstick skillet over medium heat; heat vegetable oil with butter until butter melts, bubbles, and makes a sizzling sound. Fry tomatoes in the hot butter-oil mixture until tomato slices are slightly soft and coating is golden brown, 3 to 4 minutes per side. Use a spatula and a fork to flip.

Steps:

  • To make the sauce: In a small bowl, whisk together mayonnaise, buttermilk, horseradish, Parmesan, sour cream and ranch dressing mix. Cover and refrigerate until ready to serve. Can be made up to 1 week in advance.

Much less hassle than frying in a skillet and healthier too! For the oil, you can certainly use non-stick spray but I like to use coconut oil when I can.

1/2 teaspoon kosher salt
1/4 cup cornmeal
1/4 teaspoon cayenne pepper
1 tablespoon coconut oil or 1 tablespoon other oil

  • slice tomatoes 1/4 inch thick. Sprinkle both sides lightly with salt, and let drain in a colander for 15-20 minutes.

10 green tomatoes, sliced 1/2-inch thick
6 cups spaghetti sauce, divided

2 tablespoons butter

sriracha sauce (optional)
2 1/2 lbs chicken breasts, cutlets
1 -2 cup buttermilk
1 cup all-purpose flour
1 teaspoon ground black pepper
1/2 teaspoon salt
oil (for frying)
1/2 cup unsalted butter, plus
1 tablespoon unsalted butter
1 (4 ounce) can mild green chilies
2 teaspoons prepared horseradish
1/2 cup sweet pickle relish
2 cups heavy cream

Steps:

  • Bring a large pot of salted water to boil. Add the beans and cook 3 to 4 minutes, remove and cool in a bath of ice water.
  • Prepare the Green Chile-Horseradish Sauce and the Buttermilk Fried Chicken. As chicken cooks, heat 2 tablespoons butter in a large saute pan, add the green beans and season with salt and pepper. Keep warm.
