MARYLAND CRAB SALAD

This is a personal recipe -- tried and true -- made time and time again. I use this in the good ol summa' time, but can be used during the rest of the year as well. Normally, I buy "cold steamed blue crabs" from our local fish market, that are bursting with flavor after resting in the unique Maryland seasoning. I pick the meat, and make this cooling, refreshing salad. It is also great served on a saltine or toast points. Usually though, I just place atop a garden fresh lettuce leaf, and grab a cracker or two with it. If you get the time, marinate the crab meat in 1 tablespoon of Italian dressing for about 1 hour prior to gently folding together. If you don't get the time, that's okay too! Just *enjoy* You can substitute lobster, shrimp, or even conch meat.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb crabmeat, fresh (can use other suggested seafood)
1 tablespoon Italian dressing (to marinate the crab)
1 teaspoon Old Bay Seasoning (to taste, if prefer spicy go up to 1 tablespoon)
1/2 cup mayonnaise (important to use Dukes or Hellman's)
1/4 cup red pepper, diced
1/4 cup celery, diced
1 small spring onion, minced
1/4 teaspoon celery seed
1/8 teaspoon dry mustard (Dijon can be subbed)
1/8 teaspoon garlic powder
1 dash Tabasco sauce (add more for additional spicy taste)

Steps:

  • Carefully comb through crab meat for any extra shells.
  • Making sure not to break up crab, marinate crab pieces with Italian dressing for about 1 hour. But if you don't get a chance, ten minutes works well too.
  • Mix all other ingredients in a medium bowl thoroughly.
  • Add crab meat mixture to mayonnaise mixture and mix with spatula, again not to break up pieces.
  • You can either cool in fridge for an hour or two, or you can eat directly.

MARYLAND CRAB CAKES

Categories     appetizer

Yield 8 servings as an appetizer; 4

Number Of Ingredients 12

1 pound fresh jumbo lump crabmeat
1 sweet red pepper, finely diced
1 sweet yellow pepper, finely diced
6 slices white bread, crusts removed
1 tablespoon finely chopped fresh garlic
2 jalapeno peppers, finely chopped
1/4 cup fresh cilantro leaves, chopped
1/4 cup mayonnaise
2 tablespoons "Old Bay" brand seasoning
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Olive oil for sauteing

Steps:

  • Clean the crabmeat of all shell fragments without breaking or crumbling the delicate lumps.
  • Place the bread in a food processor and, using the metal blade, process until finely crumbled. Measure and reserve 2 tablespoons of the bread crumbs to use in the filling. The remaining bread crumbs will be used to coat the crab cakes.
  • Mix the crabmeat with the sweet peppers, garlic, jalapeno, cilantro leaves, and mayonnaise. Add the "Old Bay" seasoning powder, 2 tablespoons of the bread crumbs, salt and pepper. Mix well, then refrigerate for twenty minutes before continuing.
  • Cover a work surface with waxed paper sprinkled with the reserved bread crumbs. Using a 2-ounce ice cream scoop, form eight equal-size portions of crabmeat. With the palm of your hand pat each portion into a disk-shaped cake approximately 3/4-inch thick. It is important for the crab cakes to be the same thickness so that they will cook uniformly. Press each cake into the bread crumbs, turning them so they coat evenly on all sides. Refrigerate for at least an hour to prevent them from crumbling during cooking.
  • No more than half an hour before you plan to serve the crab cakes, add enough oil to cover the bottom of an oven-proof saute pan. Heat until just before it begins to smoke. Add the crab cakes gently, being careful not to crowd the pan. (Cook them in two batches if necessary.) When the crab cakes are well browned on both sides, place in a 375 degree F. oven for six minutes to ensure that they are fully cooked and hot at the center. Serve with mesclun salad, chili mayonnaise and garnish with finely chopped tomato.

CHILLED CORN AND CRAB SALAD

Chilled Corn and Crab Salad image

A little spicy crab goes a long way in a sweet and spicy chilled salad, with fresh corn and minced hot red pepper.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 10

2 tablespoons olive oil
3 cups fresh corn kernels (from about 6 ears of corn)

Tips:

  • Use fresh crabmeat for the best flavor. Fresh crabmeat is more tender and flavorful than frozen crabmeat. If you can't find fresh crabmeat, frozen crabmeat is a good substitute.
  • Choose the right mayonnaise for your crab salad. A mayonnaise with a light flavor, such as Hellmann's or Duke's, is a good choice for crab salad. Avoid using a mayonnaise with a strong flavor, such as Miracle Whip.
  • Add some Old Bay seasoning to your crab salad for a classic Maryland flavor. Old Bay seasoning is a blend of spices that is commonly used in Maryland seafood dishes. It adds a slightly spicy and savory flavor to crab salad.
  • Don't overmix the crab salad. Overmixing will make the crab salad tough and dry. Mix the ingredients just until they are combined.
  • Chill the crab salad before serving. This will help the flavors to meld and will make the crab salad more refreshing.

Conclusion:

Maryland crab salad is a delicious and easy-to-make dish that is perfect for a summer picnic or potluck. With its fresh crabmeat, creamy mayonnaise, and Old Bay seasoning, it's sure to be a hit with everyone who tries it.
