3 (8 ounce) packages cream cheese, softened
3 eggs
3 tablespoons vanilla
3/4 cup white sugar
24 vanilla wafer cookies
1 (12 ounce) can blueberry pie filling or 1 (12 ounce) can strawberry pie filling

Steps:

  • Beat all first four ingredients together with electric mixed until smooth.
  • Put paper liners in to cupcake pan. Put one vanilla wafer into the bottom of each paper liner.
  • Fill each paper liner 3/4 full with the cream cheese mixture.
  • Bake 15-20 min at 375 or until top becomes golden brown, and a toothpick inserted comes out clean.
  • Let cool, add your favorite pie filling to the top of the cheesecakes.
  • Refridgerate at least one hour.

1 cup boiling water
8 ounces cream cheese
1 cup granulated sugar
5 tablespoons lemon juice
1 (12 ounce) can Carnation instant milk, well chilled
1 cup graham cracker, crushed
1/4 cup graham cracker, crushed

  • Dissolve Jell-O in boiling water. Cool until slightly.

2 ½ cups graham cracker crumbs
¼ cup white sugar
½ cup margarine, softened
4 (8 ounce) packages cream cheese, softened
1 ½ cups white sugar
1 pint heavy cream
2 tablespoons all-purpose flour
7 eggs
2 teaspoons lemon juice
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar and margarine until well blended . Press mixture into a 9 inch springform pan.
  • In a large bowl, beat cream cheese with sugar until smooth. In a separate bowl, combine cream, flour, eggs, lemon juice and vanilla. Beat together, and then pour into cream cheese mixture. Mix well. Pour filling into prepared graham cracker crust.
