1 tablespoon butter, softened
1 ½ cups brown sugar
2 tablespoons molasses
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 tablespoons hot water
¼ cup slivered almonds
¼ cup raisins
1 (9 ounce) package condensed mincemeat, crumbled
1 ½ cups confectioners' sugar
3 tablespoons hot milk
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease two 9x13 inch baking pans.
  • In a large bowl, mix together the butter, brown sugar, molasses and 1 teaspoon vanilla until well blended. Combine the flour, salt, baking soda, cinnamon and cloves; stir into the molasses mixture. Stir in hot water, almonds, raisins and mincemeat. Spread the dough evenly into the bottoms of both pans. It will be thin but the mixture will puff up when baking.
  • Bake for 12 to 15 minutes in the preheated oven, or until firm. Cool in pans on wire racks. In a small bowl, mix together the confectioners' sugar, hot milk, 1/2 teaspoon vanilla and 1/2 teaspoon almond extracts until smooth. Spread over warm bars. Allow to cool before cutting into squares.

The frosting recipe is optional - you can use any butter type frosting and we prefer one enhanced with orange rind or orange liqueur. Enjoy......

1/4 cup butter (no substitutes)
1 cup white sugar
2 eggs, beaten
1 cup all-purpose white flour
1 1/2 teaspoons baking powder
1 teaspoon salt (or less)
1 cup mincemeat (your choice)
2 teaspoons grated orange rind
1/2 cup chopped walnuts

Steps:

  • Cream butter and sugar until light and fluffy.
  • Add eggs, alternating with sifted dry ingredients.
  • Add mincemeat, orange rind and nuts.
  • Spread in a well greased 8 x 8 square pan.
  • Bake approximately 35 - 40 mins.

  • If your mincemeat is runny please drain it a little.

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon

1 egg

1 cup prepared mincemeat
1/2 cup raisins
3/4 cup nuts, Chopped
1/2 cup butter
