1 large egg
8 unsalted matzos, crushed (about 3 cups)

Safflower oil, for frying
4 boneless, skinless chicken cutlets (4 to 5 ounces each), 1/2 inch thick
4 lemon wedges, for serving

Tips for Matzo-Crusted Chicken Cutlets:

  • Use a variety of matzo meal grinds. This will give the cutlets a more interesting texture.
  • Don't overcook the chicken. Chicken cutlets are thin, so they cook quickly. Overcooking will make them dry and tough.
  • Use a good-quality olive oil. This will help to keep the chicken moist and flavorful.
  • Serve the chicken cutlets with your favorite dipping sauce. Some popular options include honey mustard, BBQ sauce, and ranch dressing.
