The original recipe has 3/4 cup chopped green onions that you add in the last 5 minutes of cooking. I don't use green onions for ANYTHING, so part of my modification was to leave those out. Throw them in if you are so inclined!

4 boneless skinless chicken breasts (cut into 1-inch cubes)
2 garlic cloves, minced
2 1/2 cups chicken broth
1 (20 ounce) can pineapple chunks in juice, undrained
1 1/2 cups rice (long grain white rice or brown rice, uncooked)
3/4 cup carrot (finely chopped)
1/2 cup red pepper (chopped)
1/2 cup green pepper (chopped)
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons soy sauce

1 teaspoon onion powder

Steps:

  • Heat a large sauce pan or Dutch oven over medium heat. Add olive oil.

1 teaspoon salt
1 teaspoon ground ginger

1/4 c finely chopped cilantro
1 lb fresh ground chicken
2 Tbsp island teriyaki sauce
1 tsp sriracha hot sauce
2 Tbsp minced papaya
2 Tbsp minced maui sweet onion
2 clove garlic, finely minced
1/2 tsp roasted ground ginger (prefer mccormick gourmet collection)
1/2 tsp ground curry powder
1/2 tsp ground jamaican allspice (prefer mccormick)
1 tsp coarse sea salt
0 ginger lime mango mayo:
1/2 c mayonnaise with olive oil
1 tsp roasted ground ginger (prefer mccormick gourmet collection)
1/2 c dice ripe mango
1 Tbsp fresh lime juice
1 tsp lime zest
0 other ingredients:
2 Tbsp vegetable oil, for brushing on grill
1/3 c island teriyaki sauce, (prefer kona coast brand)
36 round butter crackers
1 bag (5 oz) mixed baby salad greens

  • 1. In a large bowl combine the first eleven ingredients. Form into 36 patties, about 1/2 " thick and 1 3/4" in diameter. (think the size of your butter cracker) Place on a parchment lined baking sheet. Refrigerate, covered until ready to cook.

2 Tbsp rice wine vinegar
3 Tbsp fresh mint leaves, minced
1/2 tsp granulated sugar
1/4 tsp clack pepper, freshly ground
1 pinch salt
2 Tbsp macadamia nut oil or walnut oil
10 oz skinless boneless chicken breasts
1/4 medium pineapple, pared, cored, cut into 1-inch chunks
2 medium kiwi fruit, pared, halved and sliced
1 c strawberries, sliced
1/2 small mango, pared, pitted, cut into 1/2-inch chunks
2 Tbsp coconut, shredded, toasted
fresh mint sprigs, garnish

  • 1. To prepare dressing, in blender or food processor, combine juice, vinegar, minced mint, sugar, pepper and salt; process until well blended. With motor running, slowly pour oil through feed tube; process 1 minute, until slightly thickened.
