Time 2h

Number Of Ingredients 11

1 1/2 cups cooked, mashed sweet potatoes
1 stick butter
1 1/2 cups sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon allspice
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1 cup carnation evaporated milk
1 (9 inch) unbaked deep-dish pie shell

Steps:

  • Preheat oven to 350 degrees F. After your potatoes are done cooking and you've mashed them (make sure you mash them well or your pie will be stringy), add your butter mixing it until it melts.
  • Next take all your spices and mix them together in the smaller bowl. Add your vanilla to your spices and then add it to the potatoes. Beat your eggs well and mix them into your sweet potato mixture. Slowly begin to add your evaporated milk to the mixture. Be careful how much you add you don't want it to get to juicy. If you feel like you need to add more go ahead.
  • Pour mixture into your pie shell and put pies into preheated oven. Let bake 35 minutes.

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 1/2 cups boiled peeled and mashed sweet potatoes (about 3 medium-size)
3 large eggs, slightly beaten
1 cup evaporated milk
1/2 cup dark corn syrup
1/2 cup firmly packed dark brown sugar
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 cup chopped pecans
1 9" unbaked pie shell

Steps:

  • Preheat the oven to 400°F.
  • In a large mixing bowl, combine the mashed sweet potatoes, eggs, evaporated milk, corn syrup, brown sugar, butter, salt and spices.
  • Beat with a wooden spoon until smooth and frothy.
  • Stir in the pecans.
  • Pour the mixture into the unbaked pie shell and bake for 15 minutes at 400°F.
  • Reduce the oven temperature to 350°F and continue baking until cake tester inserted in the center comes out clean, about 45 minutes.
  • Let pie cool before serving.
  • Delicious with or without whipped cream.

Tips:

  • For a crispy crust, use a combination of flour, sugar, and butter. The butter should be cold and cut into small pieces. This will help to create a flaky crust.
  • To prevent the crust from becoming soggy, bake it separately from the filling. This will allow the crust to cook evenly and prevent it from absorbing too much liquid from the filling.
  • When making the filling, use fresh sweet potatoes. This will give the pie a more flavorful and vibrant color.
  • To make the filling smooth, use a food processor or blender. This will help to break down the sweet potatoes and create a creamy texture.
  • For a richer flavor, add spices such as cinnamon, nutmeg, and ginger to the filling. You can also add a splash of vanilla extract or almond extract.
  • To prevent the pie from cracking, let it cool completely before serving. This will allow the filling to set and prevent it from breaking apart.

Conclusion:

Maw Maw's Sweet Potato Pie is a delicious and comforting dessert that is perfect for any occasion. With its flaky crust and creamy filling, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a sweet treat, give Maw Maw's Sweet Potato Pie a try. You won't be disappointed!
