I got this recipe from a microwave cookbook I bought my mother 25 years ago. I love to serve these as appetizers for parties, and also with rice for dinner. This is a quick, tasty, easy recipe. Give it a try!!

1 (20 ounce) can pineapple chunks
1 lb ground beef
1 egg
2 slices fresh bread, crumbled
1 teaspoon instant minced onion
1 teaspoon salt
1/8 teaspoon ground cloves
1/8 teaspoon allspice
2 tablespoons reserved pineapple syrup
1/3 cup reserved pineapple syrup
1/2 cup ketchup
1/3 cup brown sugar (packed)

Steps:

  • Drain pineapple well, reserving syrup.
  • Mix together beef, egg, bread crumbs, onion, salt, cloves, allspice and 2 tbsp syrup.
  • Mold small amount of mixture around each pineapple chunk.
  • Place meatballs in 12x8x2" glass dish.
  • Cover with wax paper. Mirowave at High 4 minutes. Pour off meat juices.
  • Stir together 1/3 c reserved syrup, ketchup and brown sugar. Pour over drained meatballs and microwave at high 3 to 5 minutes longer, or until done.

2 eggs
2 pounds lean ground beef
22 saltine crackers, crushed (1 cup)
1/3 cup dry minced onion
1/4 cup milk
2 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
Pineapple chunks from 20 ounce can pineapple can, drained
HAWAIIAN SAUCE:
1 cup pineapple juice (plus water if needed to equal 1 cup) from 20-ounce can pineapple chunks used in meatballs
1/2 cup water
1/4 cup packed brown sugar
1/4 cup ketchup
1/4 cup low sodium soy sauce
2 tablespoons quality hoisin sauce (Lee Kum Kee or Kikkoman)
2-3 tablespoons Asian sweet red chili sauce (3 for more of a kick)
2 tablespoons rice wine vinegar
1 tablespoon lemon juice
3 tablespoons cornstarch
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 red bell pepper, chopped
1 green bell pepper, chopped
Pineapple chunks from 20 ounce can, drained

Steps:

  • Preheat oven to 425°F. Line a rimmed baking sheet with foil. Set aside. In a large bowl, add eggs and gently whisk. Add all remaining Meatball Ingredients except pineapple chunks and mix until well combined. Shape meat mixture into an approximate 12 x 8-inch rectangle on a cutting board with even thickness. (I put parchment paper over the meat then roll with my rolling pin to form an even thickness rectangle.) Strain pineapple juice from one can pineapple chunks. Line 10 pineapple chunks across the meat and 5 down, for a total of 50 pineapple chunks. Using a pizza cutter, slice meat horizontally around pineapple to create 5 rows, then slice vertically around pineapple to create 10 rows and 50 squares. Shape squares into balls around pineapple chunks and line on baking sheet. Bake for 8 minutes, or until lightly browned. When cool enough to touch, line meatballs in rows in the slow cooker followed by drained pineapple chunks and red and green bell peppers. Add all Hawaiian sauce ingredients to a small saucepan and whisk until smooth. Bring to a boil then reduce heat and simmer until thickened, stirring constantly. Pour sauce over contents of slow cooker. Cover and cook on low heat for 2 hours or until cooked through, gently stirring one hour into cooking. Keep warm until serving. Serve with rice.

1 tablespoon cornstarch

SAUCE:
1 can (20 ounces) pineapple chunks, undrained
2 medium green peppers, julienned
1/2 cup sugar
3 tablespoons cider vinegar
1 tablespoon canola oil
1 tablespoon soy sauce
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, brown meatballs in oil, turning often. Remove with a slotted spoon and set aside; drain., To the skillet, add the pineapple, green peppers, sugar, vinegar, oil and soy sauce. Cover and simmer until tender, about 5 minutes. 2 large eggs
1/2 cup fine dry breadcrumb
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1 cup packed brown sugar
3 tablespoons cornstarch
1 3/4 cups reserved pineapple juice, plus water if necessary to measure (it will be)
1/4 cup white vinegar
1 1/2 tablespoons soy sauce
1 1/2 teaspoons Worcestershire sauce
1 (14 ounce) can pineapple tidbits, juice drained and reserved (see above)

Steps:

  • Preheat oven to 350F degrees.
  • First, make the meatballs: combine all meatball ingredients (there's 7, beef to garlic powder) in a bowl and mix well; shape into 1-inch balls.
  • Brown them in a nonstick frying pan (I do it in 3 batches) until browned all over; drain on paper towel then place in a large ungreased casserole dish.
  • To make sauce, combine brown sugar and cornstarch in a large saucepan, then whisk in the 1-3/4 cup pineapple juice/water combination until mixture is smooth.
  • Add vinegar, soy sauce and worcestershire sauce; stir.
  • Simmer, uncovered, on medium-low heat for about 8 minutes, or until thickened.
  • Pour sauce over meatballs and add pineapple tidbits; stir gently to combine until meatballs are coated with sauce.
  • Bake in preheated oven for 30 minutes.
  • If you want a lot, this recipe doubles well.
