Sauteed mushrooms, ham and cheese are rolled inside the seasoned meat mixture. Be sure to have the ham sliced thin it just there to lend a touch of smokiness. Makes great leftover sandwiches with a touch of ketchup.

Time 2h45m

Yield 8

Number Of Ingredients 22

1 teaspoon olive oil
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped celery
1 (14.5 ounce) can whole peeled tomatoes with juice
1 (8 ounce) can tomato sauce
1 ½ teaspoons Italian seasoning
1 teaspoon white sugar
1 ½ teaspoons dried oregano
¾ teaspoon garlic powder
1 teaspoon Worcestershire sauce
2 cups water
¼ cup chopped fresh parsley
1 ½ pounds ground beef chuck
½ cup Italian seasoned bread crumbs
1 teaspoon garlic powder
1 teaspoon Creole seasoning
1 pinch cayenne pepper
½ teaspoon salt
1 ½ cups shredded mozzarella cheese
¼ cup chopped fresh parsley
2 teaspoons Italian seasoning

Steps:

  • To make tomato sauce, heat olive oil in a saucepan over medium-low heat; cook and stir the onion, green pepper, and celery in the hot oil until the onion is soft, about 5 minutes. Pour the undrained whole tomatoes, tomato sauce, 1 1/2 teaspoons Italian seasoning, sugar, oregano, 3/4 teaspoon garlic powder, Worcestershire sauce, and water into a blender and blend until smooth. Pour the tomato mixture into the saucepan and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in 1/4 cup parsley. Set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together the ground beef, bread crumbs, 1 teaspoon garlic powder, Creole seasoning, cayenne pepper, and salt until the mixture is thoroughly combined; spread into the bottom of the prepared baking dish.
  • Scatter the mozzarella cheese over the meat; spread 1/4 cup of the sauce over the cheese. Sprinkle the sauce with 1/4 cup chopped parsley and 2 teaspoons of Italian seasoning. Pick up one end of the meat layer (short side), and gently roll the meat around the filling. Reposition the meat roll in the center of the dish, and pour the remaining tomato sauce over the roll.
  • Bake in the preheated oven until the roll is no longer pink in the center, 45 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

HAM & CHEESE STUFFED MEATLOAF

Ham & Cheese Stuffed Meatloaf image

An easy to prepare meatloaf that is a little different, even my NON-eating meatloaf daughter WILL eat this one. Very easy to prepare, great leftover for sandwiches.

Categories     Meat

Time 1h20m

Yield 1 meatloaf

Number Of Ingredients 10

2 lbs ground meatloaf mixture (veal, beef and pork)
2 eggs
1/2 cup seasoned bread crumbs
1 cup vegetable juice cocktail
1 teaspoon parsley
1/4 teaspoon black pepper
1/2 teaspoon salt
2 small onions, minced
8 slices boiled ham
1/2 lb grated mozzarella cheese

Steps:

  • Combine all ingredients except cheese and ham.
  • Flatten meat mixture on foil-lined jelly roll pan.
  • Place ham slices evenly on top of meat mixture, sprinkle with grated cheese.
  • Holding one end of the foil, roll up meat like a jelly roll.
  • Remove foil, slide meat roll to center of pan, pat seams closed.
  • Bake at 350 for 1 hour.
  • Remove from oven, and allow to sit in a warm spot for five minutes before slicing.

Tips:

  • Choose the right ground meat: For the best flavor and texture, use a mixture of ground beef and ground pork. You can also use all ground beef, but it will be less moist.
  • Don't overmix the meatloaf: Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
  • Use fresh bread crumbs: Fresh bread crumbs will help to keep the meatloaf moist. If you don't have fresh bread crumbs, you can use dry bread crumbs, but they will absorb more moisture and make the meatloaf less moist.
  • Season the meatloaf well: Use a generous amount of salt, pepper, and other seasonings to flavor the meatloaf. You can also add your favorite herbs or spices.
  • Cook the meatloaf at a low temperature: This will help to prevent the meatloaf from drying out. Cook the meatloaf at 350 degrees Fahrenheit for about 1 hour, or until it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: This will help the juices to redistribute throughout the meatloaf, making it more flavorful and moist.

Conclusion:

Meatloaf rolled with ham, cheese, and mushrooms is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover meat and vegetables, and it can be tailored to your own taste preferences. With a few simple tips, you can make a meatloaf that is moist, flavorful, and sure to please everyone at the table.
