2 teaspoons plus 1/4 teaspoon freshly ground black pepper
4 slices bacon, cut in half
2 tablespoons white or red wine vinegar
1/2 cup canned tomatoes, chopped or crushed
2 tablespoons butter
1 large onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 teaspoons minced garlic, plus 1 teaspoon
1 teaspoon chopped thyme leaves
1 teaspoon chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 teaspoons Dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 tablespoons plus 1 teaspoon Worcestershire sauce
1/2 cup Heavy cream
2/3 cup Breadcrumbs
1 pound ground chuck
1/2 pound pork sausage (such as breakfast sausage)
1/2 pound ground veal
1 1/2 teaspoons salt

Steps:

  • In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
  • Preheat the oven to 350 degrees F.
  • When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.
  • In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
  • Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.

1 1/2 cups ketchup
1 1/2 teaspoons apple cider vinegar
2 tablespoons sriracha hot chili sauce
2 tablespoons Worcestershire sauce
1 egg
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 teaspoon sweet paprika
4 cloves garlic, grated (on a rasp)
8 sprigs fresh thyme, leaves stripped and chopped
1/2 cup chopped Vidalia onion
1 scallion, minced
1 pound ground chuck, divided
1 pound ground dark meat turkey, divided
2 slices potato bread, lightly toasted and cut into 1/4-inch cubes, divided
Special equipment: 9 by 5-inch loaf pan

Steps:

  • Preheat the oven to 375 degrees F.
  • For the spicy ketchup sauce: Add the ketchup, vinegar and hot chili sauce to a bowl and stir. Reserve 1/2 cup for the meatloaf.
  • For the meatloaf: In a large bowl, whisk together the Worcestershire sauce, egg, salt, pepper, paprika, garlic, thyme, onions, scallions and reserved spicy ketchup sauce. Crumble half the chuck into the bowl, followed by some bread, then half the turkey pile on some more bread cubes. Repeat with the other half of meat and remaining bread. (So a half pound of crumbled chuck, some bread, then a half pound of ground turkey, some bread and repeat until done. Adding this way will make mixing easier and lighter for a juicier loaf.) Gently mix with 1 hand, bringing the egg mixture from the bottom to the top and around until everything is gently combined. Place into a 9 by 5-inch loaf pan, flatten the top and pour the remaining spicy ketchup sauce over the top evenly. Bake in the oven for 60 minutes. Remove and allow to rest for 10 minutes.
  • Tilt the loaf pan slowly to 1 corner and discard any excess fat or juices from the pan while holding the loaf inside. Don't worry, the meatloaf will still be juicy! Slice into 1-inch thick portions. Serve warm and if there's anything left, refrigerate it and enjoy a meatloaf sandwich for leftovers the next day.

1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.

1 egg
5 ounces rotel, drained
1/2 cup ketchup
3/4 cup Italian seasoned breadcrumbs
3 tablespoons italian seasoning
1 1/2 tablespoons cayenne
2 tablespoons red peppers
1 cup ketchup
3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients together and mold into loaf in a greased nine by thirteen glass pan.

3/4 cup catsup
2 teaspoons prepared horseradish
1 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1/4 cup oats
1 egg, beaten
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 onion, quartered
1 carrot, peeled and cut into pieces
1 celery rib, cut into pieces
2 garlic cloves, peeled and halved
2 1/2 lbs ground beef
1/2 teaspoon dried thyme
1 tablespoon fresh parsley, chopped

Steps:

  • To make glaze whisk together glaze ingredients in a measuring cup or bowl and set aside.
  • Heat oven to 325 degrees F.
  • In a food processor or blender grind the oatmeal and then transfer them to a large bowl. Add egg, milk, salt, peppers and cumin to oats and stir to combine.
  • In the food processor add the vegetables (onion - garlic) and pulse until chopped (I processed a bit too long so mine resembled baby food but it still worked out well). Add to the ground beef mixture, stirring to combine -- do not over mix.
  • Spoon into a loaf pan (original recipe said to form into a oval that is 8 x 4 x 3 -- but the loaf pan is so much easier.
  • Bake for 10 minutes and then spoon glaze over loaf. Cook for another 50 minutes or until done. Let rest a few minutes before serving.
