8 ounces ground pork

1 tablespoon balsamic vinegar
2 tablespoons water

Steps:

  • Preheat oven to 400 degrees F.
  • Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.
  • Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.
  • Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Bake until an instant-read thermometer inserted into the center of the loaf registers 155 degrees F, about 1 hour. Spread the glaze onto the meatloaf after about 50 minutes. Let loaf rest for at least 10 minutes before serving.

1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor.   • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.

2 slices bacon, diced

1 (27 g) packet onion soup mix
3 tablespoons chopped pickled jalapeno peppers

Steps:

  • Heat the oil in a fry pan, add the bacon, onion and garlic and cook over a moderate heat until the onion is softened.
  • Remove from the heat.
  • Mix the remaining ingredients and the onion, bacon mix together in a large bowl-I find this best done by hand.
  • Place in a 9inch long by 3 inch wide and deep loaf dish, patting down very firmly and shaping the top nicely.
  • Bake in a moderate oven for 1 1/2 hours, draining any accumulated fat about half way through.
  • Mix the topping ingredients together, spread over the meatloaf and return to the oven for the final 30 minutes of cooking.

2 pounds ground beef
2 eggs
2 tablespoons ketchup
1 cup dry bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon garlic powder
½ teaspoon kosher salt

½ teaspoon ground black pepper
1 small yellow onion, diced
6 slices bacon
8 ounces sharp Cheddar cheese, cut into quarters

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. 2 1/4 teaspoons active dry yeast
1 tablespoon sugar
3 cups (13 1/2 oz) bread flour, plus more as needed
1/2 cup (3 oz) semolina flour
3 ounces sun-dried tomatoes, chopped
4 ounces cheddar, diced
6 strips of bacon, cooked (1 tablespoon fat reserved) and chopped or crumbled

Nonstick baking spray (or butter for buttering the pan)

Steps:

  • ON PREP DAY Combine all of the ingredients and knead by hand (mix first in a large bowl, then turn out and knead) or in a stand mizer fitted with the dough hook, until the dough is elastic. It will be lumpy, of course, but the dough itself should be stretchy. Cover the bowl with plastic wrap and let the dough rise until it has doubled in size, about 1 hour in a warm room. Meanwhile, spray a 9 x 5-inch loaf pan with baking spray. Turn the dough out onto a lightly floured surface and pat it into a rough 8-inch square. 1 tbsp vegetable oil , plus extra for greasing
1 onion , chopped
200g smoked bacon lardons
1 tsp smoked paprika
50g fresh breadcrumbs
500g beef mince
1 egg
2 garlic cloves , crushed
500g pack passata
2 tbsp onion marmalade
small pack basil , leaves only

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large saucepan and fry the onion and lardons until the onion is soft and the lardons are cooked through and golden at the edges. Remove from the heat and add the smoked paprika, breadcrumbs, mince, egg and half of the crushed garlic. Season and stir really well. Grease a 450g loaf tin with a little oil, then fill with the meat mixture. Spread 1 tbsp of the onion marmalade evenly over the top and place on a tray in the oven for 35-40 mins.
  • Meanwhile, pour the passata into a saucepan over a low heat, add the remaining garlic, the rest of the onion marmalade and half of the basil. Season, stir and heat gently until ready to serve.
  • Once the meatloaf is cooked through, take it out of the oven and let it sit for a few mins before turning out onto a plate to slice. Serve with the tomato sauce and the rest of the basil leaves scattered over.
