1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1 can (14-1/2 ounces) no-salt-added stewed tomatoes, cut up
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1/2 cup pitted Greek olives, coarsely chopped
1 tablespoon lemon juice
1/2 teaspoon dried oregano

Dash cayenne pepper

  • In a small saucepan, bring water to a boil. Stir in couscous. Remove from heat; let stand, covered, 5-10 minutes or until water is absorbed.   • Mash garlic and 1/2 teaspoon salt on a cutting board with the back of a fork until a paste forms. Transfer to a medium bowl and whisk in lemon juice, cumin, paprika and pepper. Add chicken and stir to coat.

1 large onion, chopped
2 tablespoons fresh garlic, minced
1 tablespoon ground cumin
1 tablespoon turmeric
1 teaspoon paprika
1/2 teaspoon cinnamon
2 teaspoons lemon zest
1 tablespoon flour
3 cups chicken broth
3 tablespoons honey
1 1/2 cups canned chick-peas, drained
1/2 cup dark raisin
8 skinless chicken thighs

Steps:

  • Season chicken with salt and pepper and brown on both sides in 3-5 tablespoons oil. Remove to plate.
  • Add onion and garlic; saute 5 minutes.
  • Add cumin through cinnamon and stir well with a wooden spoon.
  • Add flour and stir well to mix.
  • Add broth, honey and lemon zest. Stir to combine and add chicken back to pan; simmer 15 minutes.
  • Add raisins and cook 15 minutes longer.
  • Remove chicken and plate.

4 skinless, boneless chicken breast halves
2 tablespoons dried rosemary
1 tablespoon olive oil
3 cloves garlic, minced
1 (15 ounce) can tomato sauce
1 teaspoon Italian seasoning
½ teaspoon cayenne pepper
1 ½ teaspoons white sugar
1 bay leaf
¼ teaspoon crushed red pepper flakes
1 (15 ounce) can garbanzo beans, drained and rinsed

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Season the chicken with the rosemary on both sides; cook the chicken in the hot oil until browned evenly, 3 to 4 minutes per side. Remove the chicken from the pan and set aside.

2 tablespoons white wine
6 skinless, boneless chicken breast halves
3 cloves garlic, minced
½ cup diced onion
3 cups tomatoes, chopped
½ cup white wine

½ cup kalamata olives
