⅓ cup unsalted chicken stock
1 (6 ounce) package fresh baby spinach
1 ounce feta cheese, crumbled
2 tablespoons toasted pine nuts

Steps:

  • Combine 1/2 teaspoon oregano and 1/4 teaspoon pepper, adding salt if desired. Sprinkle evenly over top of chicken.
  • Heat 1 tablespoon oil in a 10-inch skillet over medium-high heat. Add chicken to pan, seasoned-side down. Cover and cook until browned, about 6 minutes. 2 tablespoons grated lemon peel
1 teaspoon dried oregano leaves
4 boneless skinless chicken breasts (about 1 1/4 lb)
4 plum (Roma) tomatoes, each cut into 3 slices
1 small red onion, finely chopped (1 cup)
20 pitted kalamata olives

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Mix cheese, lemon peel and oregano. Place 1 chicken breast, 3 tomato slices, 1/4 cup onion and 5 olives on center of each sheet. Spoon 1/4 of the cheese mixture over chicken and vegetables on each sheet.

1 can (14.5 ounces) diced tomatoes, drained
4 artichoke hearts (from a 14-ounce can), quartered
12 Kalamata olives, halved and pitted

1/2 cup crumbled feta (2 ounces)

2 tablespoons extra virgin olive oil
2 teaspoons italian seasoning
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup thinly sliced yellow onion
1 cup drained and chopped sun-dried tomato packed in oil
1/2 cup kalamata olive, pitted and halved
2 tablespoons minced garlic
1/2 cup dry white wine
2 tablespoons chopped fresh basil
1/2 teaspoon fresh thyme
4 ounces goat cheese or 4 ounces feta, crumbled

Steps:

  • Prepare a grill, or preheat the oven to 500 degrees F.
  • Prepare 4 sheets of heavy-duty aluminum foil to measure about 12 by 15-inches.
  • Fold in half crosswise to crease, then unfold.

1/2 cup bottled low fat Italian dressing
36 fresh spinach leaves, divided
1/2 cup sliced green onions
2 teaspoons minced garlic
2 tablespoons soy sauce
1/2 cup sliced fresh mushrooms
1/4 cup chopped black olives, drained
1/2 cup white cooking wine
1 teaspoon salt
1 teaspoon black pepper
4 cups cooked long grain rice
Garnish:
1/4 cup freshly grated Parmesan cheese
