MEDITERRANEAN CHUTNEY - LOW POINTS

Mediterranean Chutney - Low Points image

For Christmas this year I was given a bottle of Baxter's Mediterranean Chutney - the jar lasted 3 days - it was so good. As they listed all the ingredients on the jar I thought I'd have a go at imitating it. Don't be put off by the amount of sugar, when it was first made, it tasted too sweet, but the flavour settled down to 'just right' after it had been in the jar for a few days. I think you can be reasonably liberal with the amounts of vegetables, but I have given what I put in my mixture.

Time 1h20m

Yield 3 jars

Number Of Ingredients 16

5 medium zucchini, chopped
3 onions, chopped (not sliced)
2 red capsicums or 2 orange capsicum, chopped
1/2 cup chopped black olives
6 fresh tomatoes, chopped
2 teaspoons dried basil
1 teaspoon oregano
1 bunch fresh parsley, chopped
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons tomato paste
1 teaspoon fresh chili pepper (optional)
2 cups sugar
1 1/2 cups water
2 teaspoons cornstarch
1 1/2 cups white vinegar

Steps:

  • Add sugar and vinegar mixture to a good size pot and bring to the boil.
  • Add all the vegetables and tomato paste.
  • Add herbs and salt.
  • Bring to the boil, then reduce heat and simmer for at least half an hour, stirring occasionally to ensure chutney doesn't burn to the bottom.
  • If the vegetables haven't cooked down far enough and mixture is getting too'dry' add a little more water.
  • Chutney is ready when mixture takes on the consistency of a thick sauce.
  • Taste, and season with extra salt if needed.
  • Thicken with cornstarch.
  • Although mixture is already quite thick, the cornstarch holds the water left in the chutney in suspension and helps to make a more spreadable product.
  • Seal in sterilized bottles (should make 2-3 medium size jam jars).

MEDITERRANEAN CHICKEN SAMOSAS WITH APPLE CUMIN CHUTNEY

Mediterranean Chicken Samosas with Apple Cumin Chutney image

Provided by Roger Mooking

Categories     side-dish

Time 55m

Yield 12 to 14 samosas

Number Of Ingredients 17

1/2 white onion, diced
1 green apple, peeled and cored
1 tablespoon gari, chopped
1 tablespoon brown sugar
1 teaspoon ground cumin
Salt and pepper
Plain yogurt
Vegetable oil
1 pound chicken thighs, ground
3/4 cup finely diced white onion (about 1/2 onion)
3/4 tablespoon garlic puree (about 2 cloves)
1 tablespoon ground cumin
1/2 teaspoon chili flakes
1 cup grated Asiago cheese
1/4 bunch fresh sage leaves, julienned
16 to 20 spring roll wrappers
1 egg, beaten

Steps:

  • For the chutney: In a saucepan over medium heat, sweat the onions until softened, about 4 minutes. Add the green apples and reduce the heat to low and cook until the apples soften, about 5 minutes. Add the gari, sugar, cumin, and salt and pepper to taste. Once completely softened, it only takes a couple minutes, puree everything in a food processor. Set aside to cool. Once the mixture is cooled, add equal parts yogurt and puree again. The chutney can be refrigerated for up to 4 days.
  • For the samosas: In a preheated saucepan over medium-high heat, add a little bit of vegetable oil and brown the chicken with the onions, garlic puree, cumin and chili flakes, about 15 minutes. The chicken will render liquid as will the onions. Once browned and fully cooked through, season with salt and pepper. Set aside to cool. Then, add the Asiago and sage. Set aside. Cut the spring roll wrappers in half, creating two long, rectangle-shaped strips. Using a pastry brush, place egg wash on the top half of the strip. Add about 1 tablespoon of the chicken filling to the bottom half of the strip (the half that does not have the egg wash). Starting at the bottom, fold the wrapper at a 45-degree angle, making triangles over and over as you work your way up, similar to folding spanakopita. Apply egg wash if needed to seal the edges once you are done folding the wrapper. Heat a deep pot with oil to 350 degrees F. Deep-fry the samosas until lightly browned and crispy, 3 to 4 minutes. Then drain on paper towels and season with salt and pepper while the samosas are still hot and wet. Serve the apple cumin chutney on the side with the samosas.

Tips:

  • Choose fresh, ripe ingredients: This will ensure the best flavor and texture in your chutney.
  • Use a variety of fruits and vegetables: This will give your chutney a complex and interesting flavor profile.
  • Don't be afraid to experiment with different spices and herbs: This is a great way to personalize your chutney and make it your own.
  • Cook the chutney until it reaches the desired consistency: This can take anywhere from 30 minutes to several hours, depending on the recipe.
  • Store the chutney in a sterilized jar in the refrigerator: It will keep for up to 2 months.

Conclusion:

Mediterranean chutney is a delicious and versatile condiment that can be enjoyed in many different ways. It is a great way to add flavor and interest to your meals, and it is also a healthy and nutritious option. With so many different recipes to choose from, you are sure to find a Mediterranean chutney that you will love.
