This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out.

MEDITERRANEAN EGGPLANT DIP

- Preheat oven to 400 degrees.
- Spear the eggplants several times with a knife, so that they will not explode in the oven. Bake them for 25 to 35 minutes or until a knife goes into them with no resistance.
- Slice the eggplants in half. With a spoon, remove the eggplant flesh from the skin. (It is easiest to do while the eggplant is still hot; wear a rubber glove.) Purée the eggplant.
- When the purée has cooled, add all the remaining ingredients, reserving a little parsley and diced peppers for garnishing.
- Taste for salt; add more if necessary.
- Serve with fresh or toasted wedges of pita bread and leaves of curly lettuce or chicory.

- Rinse the split peas under running cold water.
- Put in medium-sized pan and add the coarsely chopped onion, the garlic and plenty of cold water.
- Bring to a boil, reduce heat and simmer 45 minutes or until very tender.
- Drain, reserving some of the cooking liquid, and put in a food processor or blender.
- Add 5 tablespoons of the oil and process until smooth.
- If the mixture seems too dry, add enough of the reserved liquid to form a smooth, thick puree. (If you don't have a food processor you can mash the spilt peas with a fork in a bowl).
