½ pound ground beef
3 tablespoons chopped fresh mint
1 teaspoon minced fresh ginger root
1 teaspoon minced garlic
1 teaspoon salt

1 (16 ounce) container Greek yogurt
½ lemon, zested
1 clove garlic, minced
½ teaspoon salt
1 large sweet onion, cut into 1/2-inch slices
4 slices green tomato
4 ciabatta sandwich rolls, sliced horizontally

8 baby arugula leaves
