Tips:

  • Choose small, tender carrots for the best flavor and texture. If using larger carrots, peel and cut them into 2-inch pieces.
  • Be sure to scrub the carrots well before cooking to remove any dirt or debris.
  • For a more intense flavor, roast the carrots at a higher temperature (425°F) for a shorter amount of time (20-25 minutes).
  • If you don't have fresh oregano, you can use 1 teaspoon of dried oregano instead.
  • Feel free to add other herbs and spices to the carrots, such as cumin, coriander, or paprika.
  • To make the carrots ahead of time, roast them according to the recipe and then let them cool completely. Store the carrots in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat the carrots in a preheated oven at 350°F for 10-15 minutes, or until warmed through.
