MEDITERRANEAN PENNE

Categories     Mushroom     Pasta     Sauté     Vegetarian

Yield 6 servings

Number Of Ingredients 13

1 Box whole wheat penne pasta
8 roma tomatoes,coarse chopped
8 oz fresh mozzarella or feta cheese
1 small bunch fresh basil/chiffonade cut
1 tbl fresh oregano,chopped
1 large jar marinated artichoke hearts, drained
1 cup kalamata olives
1 medium onion,chopped
4 cloves garlic,minced
1/2 cup white wine
1 roasted red pepper,coarse chopped
8 oz crimini mushrooms,quartered
1/4 cup olive oil,extra virgin

Steps:

  • Heat oil in saute pan. Add onion & garlic. When almost translucent, add mushrooms. Cook until color starts to change. Add wine & reduce slightly. Add remaining ingredients except cheese & pasta. Simmer to combine flavors. Season with salt & pepper. Set aside. Cook pasta al dente. Drain but do not rinse. Add diced cheese & sauteed vegetable mixture. Toss lightly. Serve with crusty frenc bread.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your pasta dish shine. Look for ripe tomatoes, crisp bell peppers, and tender chicken or shrimp.
  • Don't overcrowd the pan: When cooking the pasta, make sure to use a large enough pot so that the pasta has plenty of room to cook evenly. Overcrowding the pan will prevent the pasta from cooking properly and will make it more likely to stick together.
  • Cook the pasta al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for cooked pasta. Pasta should be firm to the bite, but not hard.
  • Don't rinse the pasta: Rinsing the pasta after cooking will remove the starch that helps the sauce stick to the pasta. Instead, simply drain the pasta and add it to the sauce.
  • Use a flavorful sauce: The sauce is the star of any pasta dish, so make sure to choose a sauce that is flavorful and well-balanced. You can find many great pasta sauce recipes online or in cookbooks.
  • Garnish your pasta: A few simple garnishes can add a lot of flavor and visual appeal to your pasta dish. Try adding some grated Parmesan cheese, chopped fresh herbs, or a drizzle of olive oil.

Conclusion:

Mediterranean penne is a delicious and versatile dish that can be enjoyed for lunch, dinner, or even a quick snack. With its fresh ingredients, flavorful sauce, and customizable toppings, Mediterranean penne is a dish that everyone will love.
