MEDITERRANEAN CHICKEN MARINADE

Mediterranean Chicken Marinade image

This is a yummy, flavorful marinade that livens up bland chicken dinners. However, this could also be used on pork chops, fish and turkey! I made this with brown rice and used some of the unused marinade as a sauce to pour over the rice. DELICIOUS!!!

Mediterranean-Style Marinated Fish (Or Chicken!) Fillets image

This is adapted from a recipe that came with some Penzeys spices I got as a wedding gift. It is fabulous. Cook time includes maximum possible marinade time. I think some feta sprinkled on top would be wonderful.

Yield 4-6 serving(s)

Number Of Ingredients 9

2 (4 ounce) fish fillets or 2 (4 ounce) boneless skinless chicken breasts
2 tablespoons olive oil
2 teaspoons red wine vinegar
1/2 teaspoon ground black pepper
1/2 teaspoon basil or 1/2 teaspoon thyme
1/4 teaspoon garlic granules
2 bay leaves
1/4 teaspoon kosher salt
crumbled feta cheese (optional)

Steps:

  • In a shallow bowl, mix oil, vinegar, pepper, basil/thyme and garlic.
  • Coat both sides of fillets.
  • Break bay leaves into 3-4 pieces, press onto both sides of fillets.
  • Cover with plastic wrap and refrigerate at least 1 hour or overnight (overnight is better!) Remove bay leaves and discard extra marinade.
  • Sprinkle with salt and cook over medium high heat in large skillet (nonstick is best).
  • For example: a thick cod fillet will need about 4 minutes per side, thin long fillets 2-3 minutes/side.
  • Drippings in the pan are great on pasta--deglaze pan by adding a bit more red wine vinegar (or just WINE!) and toss with freshly cooked (not rinsed!) warm pasta.

Tips:

  • Use fresh, high-quality fish or chicken fillets for the best flavor.
  • Choose a marinade that complements the type of fish or chicken you are using. For example, a citrus-based marinade is a good choice for mild-flavored fish, while a more robust marinade, such as one made with herbs and spices, is a good choice for chicken.
  • Allow the fish or chicken to marinate for at least 30 minutes, or up to overnight, for the best flavor.
  • When grilling the fish or chicken, be sure to preheat the grill to a medium-high heat. This will help to prevent the fish or chicken from sticking to the grill.
  • Cook the fish or chicken until it is cooked through. The internal temperature should reach 145 degrees Fahrenheit for chicken and 145 degrees Fahrenheit for fish.
  • Serve the fish or chicken with your favorite sides, such as grilled vegetables, roasted potatoes, or a fresh salad.

Conclusion:

This Mediterranean-style marinated fish or chicken fillet recipe is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. The marinade infuses the fish or chicken with flavor, and the grilling process creates a slightly crispy exterior and a tender, juicy interior. Serve this dish with your favorite sides for a complete and satisfying meal.
