My daughter and I came up with this recipe and it is absolutely wonderful. Several of my children who typically don't care for granola, loved it. I've tried many granola recipes and this tops them all. Enjoy!

1/2 c. maple syrup and or honey
3/4 c. canola oil
1 tsp. cinnamon
1 T. vanilla extract
2 c. raisins or dried cranberries

Steps:

Cool, then stir in raisins or cranberries. Store in airtight container.

Tips:

  • Utilize a variety of oats: Steel-cut, rolled, and quick-cooking oats each offer unique textures and flavors; combining them creates a more satisfying granola.
  • Nuts and seeds add crunch and flavor: Choose from a wide selection, such as almonds, pecans, walnuts, flax, chia, and pumpkin seeds. You can also add dried fruits like cranberries, raisins, and cherries for a sweet and tangy touch.
  • Control the sweetness: Adjust the amount of honey or maple syrup to suit your preference. You can also add spices like cinnamon, nutmeg, and ginger for a warm and inviting aroma.
  • Pay attention to baking time: Keep a close eye on the granola as it bakes to prevent burning. The edges should be golden brown, and the granola should be fragrant and crispy.
  • Store properly: Granola can be stored in an airtight container at room temperature for up to two weeks. For longer storage, keep it in the freezer for up to six months.
