SQUASH CASSEROLE

Standard Southern treatment for yellow squash - delicious comfort food. It takes one "sleeve" of saltine crackers to make up the 1 1/2 cups of crushed saltines - depending on how finely you crush them and pack them down this amount may vary a bit. The recipe form won't let me put in "one sleeve of saltines", but that is the amount to use. Some people like a lot of pepper in their squash - if you like things less spicy I'd stick with the 1/2 teaspoon amount.

2 lbs crookneck yellow squash, sliced
1 large white onion, chopped

1 cup sharp cheddar cheese, shredded
1/2 teaspoon garlic powder
Tabasco sauce
breadcrumbs

Tips:

  • To save time, use pre-shredded squash or butternut squash that has been roasted and peeled.
  • If you don't have yellow squash on hand, you can substitute zucchini.
  • For a creamier casserole, add an extra 1/2 cup of milk or cream.
  • If you want a crispy topping, sprinkle the casserole with panko breadcrumbs or crushed crackers before baking.
  • If your oven is too hot, the casserole may brown too quickly on top before the center is cooked through. To prevent this, reduce the oven temperature to 350 degrees F.

Conclusion:

Meme's Squash Casserole is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own dietary preferences. Whether you're looking for a hearty and comforting meal or a light and healthy side dish, this casserole is sure to please everyone at the table.
