Peppered Pork Tenderloin image

Peppered pork is really delicious -- the pepper is not overpowering, it adds a bit of a bite and a lot of flavor.

Number Of Ingredients 6

2 lb pork tenderloins (1 pound each)
1 Tbsp freshly ground black pepper (coarsely ground) (more if needed)
1/2 c white wine
1/2 c chicken broth
1/2 c low-fat sour cream
2 tsp dijon mustard (coarse ground, country style (or more to suit your taste)

Steps:

  • 1. Roll tenderloins in pepper to coat. Place in a roasting pan and bake in a pre-heated 350 degrees F for 30-40 minutes.
  • 2. Remove from oven. Place pork on a cuttting board and drain fat from pan.
  • 3. Pour wine into pan and place over high heat, scraping up any browned bits with a wooden spoon. Add broth and cook until reduced by half.
  • 4. Remove from heat and stir in sour cream and mustard. Slice pork and top with sauce.
