6 (12 inch) whole wheat tortillas
6 leaves romaine lettuce
1 ¼ pounds sliced roast beef
1 cup chopped tomatoes
1 cup chopped red bell pepper
2 tablespoons olive oil
3 tablespoons red wine vinegar
2 tablespoons ground cumin

Steps:

  • For each roll-up, tear off about a 15 inch piece of wax paper or aluminum foil. Place the tortilla on the paper or foil. Place a romaine lettuce leaf on top of the tortilla. Add about 3 ounces of beef on top of the lettuce for each tortilla. Divide the tomatoes, red and yellow bell peppers, oil, vinegar and cumin over each tortilla.
  • Begin rolling the paper or foil over the tortilla to encase the filling. Roll until the sandwich is completely rolled up. To eat, peel back the paper or foil.

I am requested to make these all the time. They are easy, and people LOVE them. I developed this over the years to suit our tastes. There are recipes close to this one, but I like mine best! The amount of tortillas you need will depend on how thick you spread the mixture. I like them thick. Zaar wont let me list the chilies, olives and pimentos correctly. But I buy the small can of each. They are already chopped small, so they mix in well with the cream cheese.

32 burrito-size flour tortillas
4 (8 ounce) packages cream cheese
1/4 cup salsa
2 tablespoons taco seasoning
4 ounces diced green chilies
4 ounces black olives, chopped

Steps:

  • In a large bowl with an electric mixer cream the cream cheese until smooth.
  • Add the salsa, taco seasoning, green chilies, black olives and pimentos (drained well).

10 uncooked lasagna noodles
1 (16 ounce) jar salsa
1 pound ground beef
1 (1 ounce) packet taco seasoning mix
1 (16 ounce) package cottage cheese
½ cup grated Parmesan cheese
1 (15.5 ounce) jar prepared salsa con queso sauce
1 ½ cups shredded Mexican cheese blend

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the lasagna noodles, about 3 or 4 at a time, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes per batch. Drain well in a colander set in the sink, and lay the cooked noodles flat on waxed paper or aluminum foil while you finish cooking the rest of the noodles.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish, and spread the salsa evenly over the bottom of the dish.
  • Place the ground beef in a skillet over medium heat, sprinkle with taco seasoning, and cook and stir the meat, breaking it up as it cooks, until the meat is browned and crumbly, about 10 minutes. Drain the fat, and place the meat in a large bowl.
  • Mix cottage cheese and Parmesan cheese into the meat. Place a cooked lasagna noodle out flat, and spread about 1/3 cup of the cheese and meat mixture along the length of the noodle. Roll up the noodle, and place the filled rolls, seam sides down, into the prepared baking dish. Spoon about 1 1/2 tablespoons of the queso sauce over each roll. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the sauce is hot and bubbling, about 40 minutes. Uncover the dish, and spread the Mexican cheese blend over the rolls. Return to the oven, and bake until the cheese is melted, 8 to 10 more minutes.

"Heather Hansen relies on this easy rollup to help toward her weight loss goal. To keep from getting bored with it, she alternates between making it with Jennie-O Turkey Store Extra Lean Ground Turkey and extra-lean beef. Though she generally eats the turkey naked, she prefers to spike it with 1 1/2 teaspoons of Mrs. Dash Southwest Chipotle Seasoning or other salt-free Mexican seasoning, which she mixes into the meat before cooking. Either way, it's a great option for a quick dinner."

1/4 lean ground turkey or 1/4 extra lean ground beef
1 (7 1/2 inch) whole wheat tortillas or 1 (7 1/2 inch) low-carb tortillas
1 tablespoon nonfat sour cream

1/3 cup chopped tomato, remove seeds

  • Place a small nonstick skillet on medium-high heat until it is hot enough for a spritz of water to sizzle on it.

1/2 cup canned orange pimento pepper or 1/2 cup yellow pimento pepper, sliced (or sliced jalapeno)
1 pckg. cream cheese, in rectangular slices
6 slices avocados
2 peeled pre-simmered tomatoes
2 cloves garlic
1/4 onion
1 teaspoon chicken bouillon powder
3 hard-boiled eggs (optional)

Steps:

  • Simmer tomato for a few minutes to facilitate peeling.
  • Peel.
  • Process in blender with the onion, garlic, and chicken bouillon.
  • Remove from stove and set aside.
  • Fill the center of each steak with a slice (or 2 depending on size) of avocado, one or 2 slices pimento pepper, and a slice of cream cheese.

16 ounces sour cream
2 Tablespoons taco seasoning mix
1 can refried beans
10-12 large flour tortillas
1 cup peas ((I used frozen peas that had been thawed))
½ cup carrots (diced small)
½ cup red bell peppers (diced (green peppers look pretty too))
½ cup green onions (chopped)
1 can sweet corn ((I used Green Giant Niblets))
1 cup shredded cheddar cheese

Steps:

  • In a mixer, blend cream cheese and sour cream until smooth. Mix in taco seasoning.
  • In the center of each tortilla, put a small stripe of refried beans. On the rest of the tortilla spread the sauce making sure to get the edges. You want a decent amount to make sure all your toppings will stick.
  • Sprinkle with toppings and roll up as tight as you can.
  • Tuck in the ends and wrap in Saran wrap.
  • *Be sure not to over-stuff or they won't roll up.
  • Refrigerate overnight or for about 6 hours
  • Slice before serving and serve with your favorite salsa (we love Chili's salsa)!
